As the climate gets better here, the sales of tea in cafeterias surges. If you thought that Arabs love their black tea or coffee, then you will change your opinion once you see the queue of the Land Cruisers and Patrols in front of all the dainty cafeteria for that foam cup of “karak chai”. 🙂 Even though I love my own “haath ka chai”, at times, when stuck in traffic, I do opt for a tall cup that will give me company till I reach home and keep me cozy. Very rare restaurants here use fresh or even UHT milk to make their tea, and most of them who do so specify it at the entrance, in the form of a little notice stuck on the glass door.

 

Majority of them use evaporated milk and you find them in bulk in all supermarkets. For one, I am not a fan of tea with evaporated milk. It has a totally different taste, when you try to make it at home. However, cafeterias make it amazingly well. Please do note that some people find it difficult to digest evaporated milk, so much so that my colleague calls it “rubber milk”. 😀 Anyway, there are so many who prefer tea with evaporated milk, so I am sharing with you the recipe I noticed in many of the local cafeterias. They brew the tea in water till strong, and then whisk in the evaporated milk. I like to use cardamom flavored ones, but you are free to use the plain ones or other flavored ones available in the market. The trick lies in whisking the milk with a little of the brewed tea till thick and then pouring the remaining tea over it. Off to the recipe…

Restaurant Style Tea ~ Tea using Evaporated Milk

Ingredients

  • A little less than a cup of water
  • 1/2 tbsp tea powder / 1 teabag
  • Sugar as needed
  • Evaporated milk as needed

Instructions

  • Bring the water to heat in a saucepan.
  • As bubbles appear on the side of the pan, add the tea powder and allow it to boil till the desired strength is reached. OR If using teabag, boil the water completely. Add the teabag and allow it to seep by dipping up and down till the desired strength is reached.
  • Pour a few tbsp of evaporated milk into the cup. Top with a little of the brewed tea and some sugar. Using a frother or a small whisk, whisk till the sugar is melted.
  • Pour the remaining tea over it and serve immediately.

Notes

I normally use the cardamom flavored evaporated milk. You can use your choice of evaporated milk while making this tea.
If you like flavored tea, muddle a pod of cardamom or a small piece of ginger into the cup, before you whisk the tea with evaporated milk.

  2. Tea is one thing I cannot give up nor can I be okay if I don’t get something close to how I make. Evaporated milk is not my thing either! rubber milk lol! I have to say the tea looks good though. For both F and I, the tea shouldnt have milk taste! Sometimes even I fail and we both go – milky ewwww.. but then we need milk too LOL. You have superb collection of tea recipes!

  3. I am not an ardent fan of restaurant tea..but am sure the tea made at home in the same style will be more flavorful n tastier 🙂
