Time for the third post in the “Apple Desserts” theme for the Blogging Marathon #81. I was helped by my drafts for the French Apple Cake and the Apple Kiwi Smoothie, but I had decided I would do a fresh post for the third one. Somehow after coming back from vacation, my head has not been working well. Moreover, life has been so hectic that I find it difficult to even cook properly, forget clicking. Even on weekends, I just want to relax, so my mood is never touch my camera. But this third draft was very much playing in my head and I had to somehow finish it. During the Muharram fasting week, I made an apple based recipe for breaking the fast, however I couldn’t shoot it in day light. I wouldn’t have bothered about the night clicks – there are plenty on the blog! – but it was so pathetic that it made me cry! I am sure it was because my cousin was with us and I was going to serve tea along with the snacks, so I had taken hurried pictures, and HD was hovering around for a piece. I was wanting to check the pictures ever since, but got a proper chance only during the last weekend. I would never want to post those horrendous pictures, which was even worse than some of my earlier pictures! Not that I take good pictures now, but at least I guess they are decent enough now… Is it just my thought, or do you all feel so? My head kept playing various ideas, and since I was looking at making a dessert as an after-lunch treat, I ended up making this simple yet delicious pudding.
The inspiration for this dessert came from here, though I didn’t stick to it completely. The base is a buttery apple pie filling, with the apples cooked in some butter and cinnamon. The topping is a light egg based pudding. The mild sweetness of the pudding makes you feel like having it more and more. I thought I should have used more apples in this pudding, to give it a more “apple” flavor. But I was in such a hurry and the apples I used were so small that it wouldn’t give me an indication of how “more” is it. Only when I tossed it into the pan, I felt it was too little, but then it was late, so I had to get it done. We really loved it. HD loved the apple pie like base, he was eating it more than the topping. It is amazing to have warm. As soon as baked, the top was totally puffed up, but as it sat, it wilted, so it is best served when it is already done. A nice big scoop of rich vanilla ice cream would be an amazing accompaniment for this simple dessert!
By the way, I still feel I could have done better with the pictures. My hands are too shaky these days – you can see the first one is totally out of focus. 🙁 Time to start using my tripod, but with my level of impatience, I have to see when I will start using it. I still prefer my hands to get me through the process quickly… Hmm…
Apple Pie Pudding
Ingredients
- 2-3 large apples peeled and chopped (I used 6 small apples)
- 15 gm butter
- 1/2 tsp cinnamon powder
- 3 tbsp brown sugar
- FOR PUDDING:
- 2 large eggs
- 2 tbsp sugar
- 3 tbsp custard powder
- 3 tbsp all purpose flour
- 1/8 tsp baking powder
- A pinch of salt
- 1 tsp vanilla extract
Instructions
- Melt the butter in a saucepan.
- Combine the apples, sugar and cinnamon and cook for around 10 minutes till the apples are soft.
- Pour into a small pan and set aside.
- Preheat oven to 180 degrees.
- Beat the eggs with the sugar till frothy and pale.
- Add in the vanilla and beat briefly.
- Sift in the dry ingredients and fold till well combined.
- Pour over the apple base and spread to make it flat.
- Bake for 25 minutes. Allow to cool for 5 minutes.
- Serve warm as is, with a dusting or icing sugar, or with a scoop of ice cream.

So many of my recipes are still pending just because of my horrible photos 🙁 ….I too sometimes reach the state of crying because I take all my props , present it well (well for me hehe…) and while time to edit ,I find everything I did went waste…And again making it and clicking won’t work for a while…

I may try this soon. InshaAllah. Only because custard powder is listed! lol. I have to find ways to use it up.. why cant they sell small packs like in India! 🙁 I have noticed that when I make extra efforts, my clicks are super flop and when I don’t intend to blog – it comes out superb. lol.
