At times, I think what are the advantages of working. Working makes you feel independent, it makes you feel productive, it makes you feel fulfilled especially if it is a field you enjoy doing. But earning definitely comes at a price. It takes away a part of your me-time, your time with the family, your time with the spouse and many little things that you would have enjoyed otherwise. Let me give you an example – the joy of having a cup of hot tea in the comfort of a silent home. After sending off the kids and the husband, the house is all yours. Yes, the feeling of loneliness comes by but at the time, who doesn’t love to have time to sip your cup without any sort of disturbances from any side? But yes, at times, the feeling of not being financially independent can be a bit disturbing. Financial independence is one of the perks of working but it comes with a lot of side effects – the tension of having to go through traffic in the morning, the fear of your boss’ firing if you goof up on something, the politics in the office, sometimes mean colleagues, etc. etc. etc. I keep telling myself that all comes with a cost attached – whether you are working or not… As much as I enjoy the perks with it, I yearn for what all I miss due to it… 🙂

I love a good hearty soup for dinner. Sometimes I wish I could make loads and freeze it up but then my folks at home frown at the sight of heated up frozen food. 😕 I guess we are so used to having fresh food daily. Though the climate is still hot, the frequent variations in temperature is actually not helping. It just contributes to feeling under the weather most of the time, or having nasty headaches, which literally spoil a beautiful evening. A soup is just the right food during those times – agree or not? This soup was adapted from Jehanne, when she had posted once on her FB page. Alas, I can’t search up the link to it. 🙁 The time she posted it, I had to try it. Cherry tomatoes are always available in the aisle now and I love the tender flavor of it. Roasting it along with garlic, olive oil and a mix of spices just makes your kitchen smell amazing. You can do that earlier and just leave it in your oven till it is time for making your soup. Once the time approaches, blitz it, simmer it up with some chicken stock – or vegetable stock – and you have an amazing soup to go… We had it just like that, with absolutely nothing to go with it. It is so apt when you don’t want any carbs or not in a mood for a good sized dinner. Do check it out and try it too! It is simply amazing… 🙂

Roasted Cherry Tomato Soup

Course Soup
Prep Time 30 minutes
Cook Time 15 minutes
Total Time 45 minutes
Servings 3

Ingredients

  • 350 gm cherry tomato
  • 2 tbsp olive oil
  • 6 cloves garlic
  • 1/2 tsp paprika powder
  • 1/2 tsp dried parsley
  • 1/2 tsp dried basil
  • Salt and pepper to taste
  • 2 cups chicken stock

Instructions

  • Preheat oven to 200 degrees.
  • Combine all ingredients from tomato to salt and pepper in a roasting pan and roast for 30 minutes.
  • Allow to cool completely. Blend along with the chicken stock till smooth.
  • Heat the soup in a saucepan till boiling.
  • Switch off and serve warm!

  7. I can relate to the first para so much! but let me tell you – we will eventually find solace in any situation, at work or as home maker! Continue to work as much as you can, save some money and keep its stashed for your emergency, and please enjoy every moment while it lasts.
