Coming to the second post of the series of “Vegan Desserts”, after the Dates Granola Bar – A sorbet is a perfect frozen treat! What is a sorbet? A sorbet is nothing but fruit and sugar. You can actually make sorbets without fruit too – just water, flavoring and sugar. But let me concentrate on sorbet with fruit. A sorbet is one of the easiest and guilt free frozen dessert that you can have. If made at home, you can use minimal sugar and make it almost 100% fruit pulp, like I have done with a whole papaya. A sorbet works especially if you have folks at home who may not eat fruit. My kids are not fond of papaya, but this sorbet totally clicked with them, since they felt it like an ice cream. If you look at the ingredients in a sorbet, it is very similar to a granita (like this one I already have on the blog) but sorbets are churned and granita is scraped to look like ice flakes. This is one of the numerous sorbets I am going to make at home, for sure. Since papaya is one of my favorite fruits, this sorbet did not last for too long in the fridge. All I did was to pull out the bowl, dig in a spoon and have it as I watched “Food Network”. I ended up skipping dinner that night. 😉 It is so delicious, that you need to try it and have it for yourself. Off to the recipe…

Papaya Sorbet

Ingredients

  • 1 medium papaya about 750 gm
  • 2 tbsp sugar
  • 1 tsp vanilla extract
  • Juice of one lime

Instructions

  • Peel and chop the papaya. Grind all ingredients into a pulp.
  • Pour into a freezing container and store in the freezer for two hours.
  • Take out and beat to break the ice crystals.
  • Keep in the freezer for another two hours and take out and beat.
  • Freeze overnight.
  • Leave on the countertop for 5 minutes before scooping and serving.

  10. I love ripe papaya! I mean it is should so ripe that we can scoop from the halved fruit! Yum! I have seen Sorbet recipes raining when summer started – but never got around to make some. Your bowl of sorbet looks so bright and colorful! Can’t wait to know whats next!
