While trying to finalize what to do for this month’s 3 back-to-back theme, I was in a little confusion. Initially I had decided to do “mango” as the theme, but since I preferred eating my mango more than cooking with it and already the net is flooded with variety of mango recipes, I decided to not go ahead with it. Then I thought about strawberries – one fruit that I have seen is continuously available from some country or the other over the past few months.  Even though I had the recipes for the theme, somehow I wasn’t really convinced of doing it, so dropped the idea. And then finally settled for what you are going to see from today, for the next three days on the blog… 🙂

 

Those who read my blog regularly are already aware that I am currently on a vegan diet. Ever since, I have been making treats only on weekends and it is always vegan, so that I could have it as well. The meal would be a vegetarian rice cooked in oil and a non-veg side to satisfy the rest in the family. But I can’t compromise that much on the sweet dish, can I? 😉 Since I love to bake, I have decided to post three successful vegan bakes, 3 recipes in a row, from today. Ready? I am ready… 🙂

After the papaya cake, my spirits were pretty high to makes some cakes and experiment. The first one I baked in the process were these brownies. As usual I was apprehensive, but look at what goes in – avocados, olive oil and coffee! Till the bake came out of the oven, I was tensed. I was really not sure about the texture but I was seriously in for a big surprise. These brownies were surprisingly fudgy and moist! I kept it to cool overnight and cut them the next day, but still they were melt in the mouth. I made these the previous day of the Zomato conference last month and fed a piece each to Humi, Faji and Anamika, and they loved it, the best part being that they couldn’t believe that the brownies were vegan! I have shared the version here with a mix of flours. I have made it with wholewheat flour alone again but I would suggest that the best is the mix of both flours! 😀 Off to the recipe…

Vegan Avocado Brownies

Ingredients

  • 1/4 cup pureed avocado
  • 1/4 cup olive oil
  • 1/2 cup all purpose floor
  • 1/2 cup wholewheat flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup raw sugar
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cup brewed coffee
  • 1/2 cup semi-sweet chocolate chips refer notes

Instructions

  • Preheat oven to 180 degrees. Grease and floor a brownie pan (8x8).
  • Whisk the mashed avocado and olive oil till smooth. Add all the other ingredients except the chocolate chips and fold in till well combined.
  • Fold in the chocolate chips.
  • Pour the batter into the prepared pan and bake for around 20 minutes till a skewer comes out clean and the top is firm to touch. Do not overbake.
  • Allow to cool completely in the pan. Cut and enjoy!

Notes

I have used normal chocolate chips into half the batter since mine weren't vegan. I added it for the kids and had the portion which didn't have the chocolate chips.

  3. Interesting! As much as I love brownies I must say I have never attempted it anytime! I have no doubts about how good this must be tasting because I know your are brownie queen! I am still in awe about the brownies you gave me when we first met – that is totally fat free and I never knew until I asked about it much later! 😛 First thing I thought was omg there is chocolate chips, then I read your notes! must have had couple more dishes to do 😛 Liked the way you have stacked the brownies with paper like the source! Can’t wait to know what more you have to share.. Not a vegan and never will be but these are great for weight watchers isnt it?

      There are chocolate chips that are vegan available… but not much around here. I got some drops from our office which is dark chocolate and don’t have any dairy as its ingredient, so you can imagine how excited I am! 😀 Thank you so much Fami…
