After the Dum Choru and the Sambaar Saadam, coming to the third and final of the rice series! And without realizing much, all three varieties shared seem to be vegeterian! 😀

 

I have already posted the recipe for Neychoru (Malabar Style Ghee Rice) – prepared normally and using a pressure cooker – on the blog. This is a small variation. I had seen the idea during casual browsing and really don’t remember where I picked up the idea from. The addition of tomato gives a nice list to the otherwise mundane neychoru and takes it to a new level. The best part is that you hardly need anything to go with it – just some raita and chammanthi will do. But then, I am sure many of them have the same problem that I do – if there is no side to this (read as non-veg!), then I get to see gloomy faces. Hehe… Off to the recipe…

Thakkali Neychoru ~ Tomato Ghee Rice

Ingredients

  • 3 tbsp ghee
  • 1 bay leaf
  • 1 cinnamon stick
  • 3 cloves
  • 8-10 black peppercorn
  • 1 star anise
  • 3 cardamom crushed
  • 1 tbsp raisins
  • 1 tbsp cashew nuts
  • 1 big PC ginger pounded
  • 2 sprigs curry leaves
  • 1 onion sliced
  • 2 to matoes minced
  • 2 cups jeerakashala rice
  • 3 1/2 cups boiling water
  • 2 bouillon cubes optional
  • Salt to taste

Instructions

  • Heat ghee in a large saucepan and briefly fry the whole spices.
  • Add the cashews and raisins and fry till raisins are puffed up.
  • Add the ginger, curry leaves, onion and tomatoes and cook till the tomatoes are softened.
  • Add the rice and saute for five minutes.
  • Add the boiling water and cubes, if using, and keep on high till the water comes to a rolling boil.
  • Adjust salt and cook on low flame for around 20 minutes with closed lid till the rice is fully done.
  • Fluff up using a fork and serve hot with any side dish.

    That looks delicious!
    Interesting too, almost like a Kashmiri pulao except for the star anise, curry leaves & tomatoes.
    I wish we could get curry leaves here in Nepal.
