Last weekend, we had the PT meeting at school along with the answer sheets for the kids’ just concluded exams. Azza being in kindergarten, has continuous assessment, so she didn’t have any exam but Rasha did have. As usual, my “overconfident” brat scored just below what she could have scored. Alhamdulillah, there was marked improvement in all subjects except Maths, where it showed a deep decline. A look into her paper and it was all careless mistakes. After seeing her class teacher, we went to see her Maths teacher. Naturally, she was disappointed. Rasha stuck to me, playing with my sheila, while the teacher lamented how well she could score considering that she is very bright in Maths. And she is, Alhamdulillah, at least I feel. I only listened to the teacher, looked to Rasha right into her eyes and smiled. Slowly she whispered to me, “Ummi, don’t smile like that, I feel like laughing!” 😀 Even though I get very irritated when she takes her studies a bit lightly, I just cannot get myself to push her to study. That goes to the little one as well. Our environment at home was such that we were never forced to study. Umma would crib that D was never strict but he would just say, “If they want, they will study.” And it was such, that we were all good students in our way. I would be sitting with my Maths book watching a cricket match. B would be walking all over the place, hanging the book in his hand. My sister was the only one who did it in the conservative way – in a silent locked room! Hehe… So somehow, I don’t feel like pushing them, though I know if I push Rasha a bit, she will excel much, but then won’t they miss out the little joys of life meant for now? Anyway, once they reach the last five grades of school, ie. standard 8 onwards, it is going to be a mad rush and I am sure by then, she will realise why she needs to study and put in the effort. Till then, I feel, let it go this way but not that I leave her and Azza loose, just that I will tighten them up when I feel they are getting too loose. 🙂

I guess I will leave you all with these delicious carrot muffins. If you ask me my favorite cake, it is easily this carrot cake my umma used to make. How much ever better cakes I make or eat commercial cake, somehow the simplicity of her cake can never take away the feel. I guess you all get what I mean… 🙂 This muffin is no different. Making it completely in wholewheat flour makes it even more healthier. Couple it up with a hot cup of tea for a cold morning, you are in for having the whole batch of it! Hehe… Off to this easy recipe…

Wholewheat Carrot Muffins

Ingredients

  • 1 small carrot peeled and grated
  • 10-15 cashew nuts chopped
  • 2/3 cup wholewheat flour
  • 1/4 tsp baking soda
  • 1/2 tsp baking powder
  • A pinch of salt
  • 1/4 cup sugar
  • 1/2 tsp cinnamon
  • 1 large egg room temperature
  • 1/4 cup oil
  • 1/2 tsp vanilla extract
  • 1/4 cup milk *

Instructions

  • Preheat oven to 180 degrees. Line muffin pan or use silicon muffin moulds.
  • Combine all the dry ingredients - flour to cinnamon - in a bowl and whisk well.
  • In another bowl, whisk the egg and oil till well mixed. Add the vanilla extract and mix well.
  • Make a hole in between the dry ingredients and add the wet ingredients. Fold till the mixture becomes moist.
  • Fold in the grated carrots and cashew nuts- do not overmix. If you feel the mixture is too tight, add in the milk. *
  • Divide equally into six muffin cups. Bake for 20 to 25 minutes till the center tested comes out clean. Cool slightly. Can have warm with a cup of milk!

  5. It depends on your point of view .What i feel is we should not let the kids take advantage of ourselves but i will consider yours as well.By the way loved this simple carrot muffins as well.

    I know the feeling… We can tell the kids to do something and it is really up to them if they want to do the thing!

    Nice carrot muffins! Hope that these yummy food will convince them that mum does care and convince them more to do the right thing 😀

  8. yes, kids these days have too many things to concentrate rafee, i focus only on concepts, if he understands that, i dont bother about the marks or grades. As u say, it is going to be a mad rush later in life, so let them play and enjoy as long as they can.
    Muffins look yumm and those muffin moulds are more cuter!!!

Rafee, I feel that kids these days have too much to do when compared to our days…guess the world is getting more competitive day by day…not only studies but other activities..most kids here have min 2 other activities like sports or dance or music etc…after that they don’t have time for anything… I feel our days were better atleast we had time to play in the evening with friends
