Dulce De Leche Baked Cheesecake

I don’t know how long this post has waited for its chance to appear on the blog. I really don’t know why I have delayed posting this cake for so long. I wanted to make this cake as one of my milestone posts but somehow other posts – specifically the Mango Entremet and Eggless Milkpowder Cake – kept pushing this aside. Not because it wasn’t good enough, but I had so many reasons for just preceding those posts before this one. Finally it is here! This happens to be post #700 on the blog and I must say that each one of you who is reading this post is a reason for me to be continuing with the same zest I started blogging with. InShaAllah, hope to continue to do the same, till the interest continues… I am sincerely hoping that the flame keeps itself burning without dying down at any time.. 🙂

I baked this cake way back in March when my sister came visiting for three days. Before she came from the US, her only request from me was to make a cheesecake. Remember the Nutella No-Bake Cheescake? That one was also made as per her request. After that one,  I had not made any other cheesecake. When she requested for a cheesecake, my mind started doing its calculations. I had not baked a cheesecake before and I felt this was the opportunity to do it. After scouring through many many recipes, I decided to bake this sinful cheesecake – a brownie base, Dulche de Leche flavored cheesecake and a white chocolate ganache to top it up. Doesn’t it sound really sinful? It definitely was!

It was an experience having my sister watching me from behind as I clicked the pictures! 😉 I kept her waiting and drooling before she could lay her hands on them. Hehe… I had basically adapted this recipe from here and took around two days to finish the process, in fact two nights. One night, I baked the brownie base, allowed it to cool and then pushed it into the fridge. The next day, after work, I prepared the cheesecake batter and let it bake and cool. The next day morning when she was coming, before I left to the airport to pick her family from the airport, I prepared the white chocolate ganache, and spread it on the top before I pushed it into the fridge.

 

Those three days she was here, it was a whirlwind time for us. I was totally packed, especially when she is somebody who comes with so many plans when she is having me around. 🙂 We covered a lot of places in that short span and also visited a friend of hers, before leaving them at the airport in the midnight for their flight back to home. As I type this post, she is already back in the US last month and her little one has started his pre-school. He also calls me ummi just like my kids do and I don’t want to change his calling me that way.

So much different from all my posts where I have a maximum of three pictures are posted. 🙂 I do have a weakness for bakes with Dulche De Leche though I don’t like having it as it is. Dulce De Leche Baked Cheesecake

A decadent baked cheesecake flavored with DDL, with a brownie base and white chocolate ganache

Ingredients

  • For the brownie crust:
  • 85 gm dark chocolate
  • 50 gm butter
  • 1/4 cup sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 cup all purpose flour
  • 1/4 tsp salt
  • For the cheesecake:
  • 2 x 300 gm packs Philadelphia cheese light
  • 1/3 cup brown sugar
  • 3 large eggs
  • 1 1/2 tsp vanilla extract
  • 1 cup dulce de leche
  • For the topping:
  • 100 gm fresh cream
  • 100 gm white chocolate
  • 2 tbsp dulce de leche for drizzling

Instructions

  • Let's first make the brownie crust. Preheat oven to 180 degrees. Grease a 9 inch spring-foam pan.
  • Melt chocolate and butter using a double boiler. Cool slightly.
  • Combine sugar, egg and vanilla and whisk well.
  • Add the melted mixture and whisk. Add in the flour and salt and whisk till combined.
  • Pour into the pan and bake for 12 minutes till the top is firm and a skewer inserted comes out with some crumbs. Cool in pan completely. Our crust is ready.
  • Time for the cheesecake part! Preheat oven to 150 degrees.
  • Using an electric mixer, beat the cream cheese and sugar till fluffy. Add eggs, one at a time, beating well with each addition.  Add in vanilla and finally the DDL and beat well. Pour over the prepared brownie base.
  • Bake for an hour at 150 degrees. Reduce the temperature to 120 degrees and bake for another 45 minutes.
  • Turn off the oven. Take out the pan and run a knife across the edges.
  • Return the pan to the oven and keep in the oven for a couple of hours to rest. Cover loosely with cling film and refrigerate overnight.
  • For the ganache, heat the cream till hot, not boiled. Pour the cream over the white chocolate and whisk till melted.
  • Allow to cool. Spread on the top. Drizzle the DDL all over. Allow to rest till thickened.
  • Slice, serve and enjoy!!!

  17. hi..your DDL cheesecake looks yummy????..I never baked cheesecake..I mostly prepare no baked ones..I have a doubt..Do you bake cheesecake in a waterbath or directly??..I heard most of the baked cheesecake use waterbath..will cheesecake takes longer to bake??..I asked so when I read the recipe,I felt baking time is too long????

      This is also my first baked cheesecake and hopefully the beginning to many… Bake it as per the recipe you are referring to, I have read that for cheesecakes to bake properly, the temperature has to be low and baking time longer… Here you can see it is baked at 150 degrees for an hour and then you have to allow it to cool completely, I have seen recipes where the temperature is set to 120 degrees and baked for around two hours!
