Tuna Egg Wrap

At times, life is like as though you are looking into eternity – an endless pit with seeming-less options. Many of us go through this – your thoughts don’t make sense, your feelings seem out of place, the hectic rush of life pPininches out the maximum of your energy… At times, you feel you could just put a full stop to everything and rush back to those recesses of your mind, where your comfort zone rests. But is it a possibility? Just the time I feel everything is getting back to normal and maybe I can put my demons to rest, all of a sudden I keep getting my surprise hits. Yes, it frustrates me as to why can’t life be the way I want. But then… there is a technique of bringing us back to ground realities and making us realize that life is actually NOT what we want, rather what HE wants. How many of us recognize this and give into this extremely important fact of life? Not many of us, in fact not at least 80% of us… We are told to live life as per our whims and fancies but is that the case? Rewinding your life in all its bits and pieces as much as your memory will accommodate it for you, will make you realize that it was never the case. Never, 100%… But if you go into deeper thoughts, we slowly realize that what was given to us as much as what was taken away from us have influenced our life events and movements so subtly, that it has affected and changed the course of our life, for good, always… even if it happens after a bad time. It all boils to one single fact – gratefulness… Sometimes I push myself as much as I can, and tell myself that I can do it, but when I think of my limitations and my boundaries, instead of feeling bad about it, I tell myself to think of what He has given me. That is where this verse hits me all the time – during my bad times, there has been a lot of good… only matter is that I see it now. Sometimes I even wonder if I deserve it, but Allah gives to whom He pleases and as long as we accept the fact that He gives and show Him our gratitude in forms that He likes, He will give what is good for us at His time… InShaAllah…

 

I know again I get to my heavy talk… but then I need to unleash it somewhere, right? To keep it light for all of you, here is a simple dinner. Sometimes, I really don’t want to make a curry. The hassle of going through the whole procedure of literally pulling down the kitchen to prepare one drives me nuts. This is the time I like to settle down to a soup and salad, or to make it a little more heavier, a sandwich. Here is one such sandwich – tuna and egg done together into a pita and filled with salad. Both tuna and eggs hardly take time to cook and the whole process of assembling the sandwich takes no time at all. At the end of the day, tummy bi khush, mummy bi khush… hehe… Off to the way it is made…

Tuna Egg Wrap

Ingredients

  • 1 tbsp oil
  • 1 onion minced
  • 2 tsp tomato paste
  • 2 x 185 gm tin tuna chunks drained and mashed
  • 1/2 tsp turmeric powder
  • 1/2 tsp red chilli powder
  • 1/2 cup sweet corn kernels cooked
  • 3 eggs
  • 1 tsp black pepper powder
  • Salt to taste
  • 4 wholemeal pita breads
  • Mayonnaise as required
  • Chilli sauce as required

Instructions

  • Heat oil in a saucepan, saute the onion till soft.
  • Add the tomato paste and saute for a couple of minutes.
  • Add in the mashed tuna and the masala powders and cook on low flame for around five minutes. Add in the cooked sweet corn and mix well.
  • Make a hole in the center. Break in the eggs. Sprinkle the black pepper over.
  • Mix vigorously and ensure eggs are completely mixed into the tuna.
  • Cook for a couple of minutes. Do not cook for too long otherwise the mixture will get too dry.
  • Warm the pita breads. Cut into two and slit.
  • Spread mayonnaise as required. Spoon in some of the tuna mixture lavishly. Drizzle chilli sauce over. Repeat for the other piece.
  • This quantity is enough for making four pita bread sandwiches.
  • Serve with some salad!
