Be My Guest – Spicy Chicken Tomato Sauce and Blue Velvet Cupcakes

Time for another guest post!!! Till date, whatever guest posts have featured were those who I had invited over to feature in my blog. I am so glad to inform that now I am getting emails from fellow bloggers asking whether they could be accommodated for this series. Hey, why not? I strongly believe that we are into this to help each other, learn from each other and encourage each other. I really believe in the saying of our beloved Prophet Muhammad (Peace be upon him), “None of you will truly believe until you love for your brother what you love for yourself.” (Sahih Bukhari). Amazing words, indeed…   The main reason why I started this series was to see if bloggers that I adore would be kind enough to accommodate my requests, which they have done. That is so well evident in the excellent guest posts that I have received from all my lovely blogger…

Eggless Garlic Zaatar (Thyme) Rolls

It’s already Thursday today!!! I cannot believe myself. I feel that this week has flown by skipping a couple of days in between!! This weekend is devoid of any plans, which is good. I guess then I can twist and tweek it the way I want, InShaAllah… 🙂   I have just noticed that for the past few posts, I’ve been only posting desserts or snacks rather than some hard core meals!!! I guess it’s time to break that trend at-least for some time. So after today’s post, hopefully I will post some meals… These garlic rolls are too good… I have taken this recipe from Suhaina’s My Singapore Kitchen, just like how I had done for the Mini Sausage Rolls I posted sometime back. Actually speaking, I lost my fear of working with yeast, once I had made these two recipes from her page. This is also one no-fail good recipe,…

Chocolate Hazelnut Ice-cream

I am having a mad time this week. Till now, it’s been really packed. At work and at home, things have been moving at a fast pace. A missing fiasco by my little one at a local shopping mall of Friday, a visit of a relative, my elder one’s mid terms and my D approaching 60 years today – quite a hectic time to be in, right? On top of that, work is also getting a bit too tight, even though I love it when it does get tight. You may get the irritation creeping in, but that tightness ensures that you do not get any time to think about anything else, including munching in some biscuits during the mid-day!!! 😉   Today, I am giving you guys another easy-peesy ice cream recipe. This one is a keeper, I guarantee you. I have made it just once, want to make…

Chicken Nuggets Vegetable Pizza

I am so glad to be a part of the Home Bakers Challenge, started by Priya Suresh akka of Priya’s Versatile Recipe. The time I saw the announcement, I knew I had to be a part of it. The main intention is to give a challenge every month, which has to be completed within the stipulated period and posted within the due date. This month’s challenge is hosted by Divya Prakash of Divya’s Culinary Journey and the theme was pizza.   Pizza has been on my to-do list, ever since I got the oven last year. But as usual, with a lot of things, I’ve been procrastinating like mad – later, later, later… My Rasha always complained, “Ummi, you have been promising pizza and nothing’s happening!!!” So when the challenge was up, I was the happiest person. Finally, I would go ahead and make my word to her a reality…

Double Coconut Pudding – My 3rd guest post for “The Cooking Doctor”

I am so excited today. I hope you understood that from the header itself. During a casual chat on FB, Jehanne asked me if I could do a guest post for her, as it would be like a recess for her blog. A recess, and that too with my guest post??? I was kind of embarassed. I consider her pictures first class, whatever said and done. This was so well evident in the guest post she had done for me a few weeks back and many of you have gone back to her page to see more of it as well. But she insisted I do one for her. I had made this double coconut pudding for my colleagues some time ago and it was an instant hit. The double flavoring of the coconut milk and the tender coconut water coupled up with the cream and condensed milk gave it…

Bread and Butter Pudding

Today, I thought, instead of me doing the talking, I will just put across a little phrase that I really loved on FB, for all you “butterflies” out there to ponder about… 🙂 Meanwhile, please do not forget that my event is ending tomorrow. So do send in your entries before it finishes. I would love to hear from you all… 🙂   I always love quick desserts, that you can put together within no time and just dump it in. I was really in a mood to have something sweet and had this packet of bread sitting in my fridge. Suddenly, I remembered this recipe and thought, why not I make it. Immediately I started all the action and in the next 40 minutes, the dessert was done. This is a warm dessert and therefore, we enjoyed it after dinner in the same speed it got out of the…

Chicken and Cheese Pockets

The temperatures are slowly starting to rise. It is starting to get warm during the mornings, even though evenings are quite sober and breezy. The nights are becoming shorter and hence days are flying faster, it feels like. Very soon, it’s going to become actual summer. When the temperatures are going to start from 40 degrees and above… The time for barbecues and beach visits will cease. I am thinking to take the kids to the beach this weekend, but it all depends upon the sunshine.   Today’s recipe is a slight twist from our normal samosas. Wrapped up in a box and hidden in with a surprise. What is it? Cheese, of course. I had made this just randomly to finish off some of the cheese that was lying in the house and everybody enjoyed. What I love regarding this pastry is that when you rip off from the center  I love the way…

Avalum Pazhavum – Beaten Rice Flakes with Plantains

Do you believe in the power of the simple joys of life? I do… I really do. Sometimes, I feel that in this mad rush, these joys are what keeps me afloat, and most the joys come in the form of those little ‘imps’ I have at home. They can make up my day anytime with their little naughty doings, which at the beginning irritates me but when I think about it later, it does bring a smile to my face. The other day, I was quickly preparing dinner  to take the kids out and they were playing in the room. Supposedly, Rasha was the shop assistant and Azza  the customer, so whatever the “customer” required, “shop assistant” kept saying, “OK, ma’am”. They finished their play session and it was becoming time to get ready. I called out, “Azza, come here.” She immediately replied, “OK, ma’am”. I gave her a…

Athishaya Pathiri – Baked Pancakes

Sometimes, things come as it comes, giving you surprises all across the way. Blogging has just been that way for me. I started it at a whim on things, but believe me, now I am enjoying each and every bit of the cooking, clicking, typing and random rambling!!! Not to mention, all of you out there who have been extra supportive… 🙂   You may have noticed that from the beginning of the year, we have had two cook-along for the Kerala Kitchen – the first one being the Kappa Masala and the second being the Chammanthi Podi, both which were hosted by Nagalakshmi from Edible Garden, who I don’t think needs any introduction – she is such a seasoned blogger! The whole purpose of Kerala Kitchen blog was to introduce to all the beauty of Kerala cooking – how much it varies from north to south!!!   This month,…

Be My Guest – Oven Roasted Chicken With Pan Roasted Potatoes

After missing this series last week, thanks to a packed schedule, I am back again with another beautiful guest post. This time, it is by a dear blogger friend of mine, who prefers calling herself Familycook. She blogs at The Food I Cook, and she has posted more than 300 recipes, which is no mean feat! Now she has the smoothies series on, and I must tell you that each time she posts a smoothie, I have a little well in my mouth!!! Hehe…I am really glad to have found her on blogosphere and we now have a little friendship going on by email, which I am very happy about, Alhamdulillah. She is to me like a big sister, who guides me on in her own way, especially related to behaving with kids. I find her advice really helpful in all ways and she seems to be a sweetheart right…

Vazhuthananga Parippu Curry/ Brinjal Dal Curry

Even though I love cooking, there is one thing I dread to do – making curries for afternoon rice. We, being from the land of coconuts and paddy fields (which are fast disappearing unfortunately!!!) are so stuck to our rice eating habits that it is so difficult to get rid of it. Thankfully, my HD is OK with anything he gets to it, but my D definitely wants rice – can’t blame him, they have had this habit from the beginning. When umma is gone for her long breaks, I struggle to plan out the afternoon curries. There has been times when I have made a big “chatti” full of sambar, enough to meet the requirements for a week and I get to see my poor D’s expressions every time I come back from office. How wouldn’t he, after having that sambar from Saturday right till Wednesday? On Thursday morning, while I will be…
