Seriously, on Fridays, being at home in this part of the world is actually strange. For the last eight Fridays, I’ve been busy with my certification classes and now this Friday, finally when I am relieved to have ended that, my HD gets busy with his set of programmes!!! So here I am stuck at home and doing this post…   I stay in a place which is very multicultural. In fact, Dubai is known to market itself on the basis of multicultural coexistence. You can find the whole world here, literally in one place. Those who are living in Dubai or who have been here would definitely vouch for what I say. We have a Pakistani restaurant downstairs and we have keep ordering take aways whenever possible. Their food is very similar to our north Indian cooking and they have such awesome tikkas and kebabs. This is one such recipe….

Spiced Honey Mug Cake

Mug cake seems to be the say of the day. Yes, it is absolutely convenient. You crave for something sweet and you don’t want to share it – mug cake is the way forward! It can be whipped up in less than 5 minutes and dumped down even faster into your system! This mug cake was made sometime back when I was really craving to bake something, yet didn’t have much time in hand. You cannot say that you are baking a mug cake, you are actually microwaving it – both make quite a lot of difference! However, the final product being a cake, the satisfaction received is somewhat at par. Mexican Flan

I do have a sweet tooth, but I can tell you one thing – once I started cooking, I really cannot eat Nutella, condensed milk or the likes directly into my mouth. I somehow feel that they are better when included in cooking. Seriously!!! These were things I could keep licking my spoon and dipping it over and over again, but now I have got over the urge to do so. Therefore, last time, when I baked a cake for our schoolmates get-together (will post sometime later), I had this remaining dulce de leche, called DDL with love, lying in the fridge and was really wondering what to do with it. Sausage Pasta with Bechamel Sauce

I was wrong yesterday, completely wrong… :T I have two more recipes to go from my previous blog, and  I completely forgot about it. Hmmm…. memory loss seems to be playing a very important role in my life these days. A doctor friend had once hinted that childbirth reduces a lady’s memory power, ie. the more children she has, the more the memory deteriorates. With two, if my memory is like this, I am scared how it would be if I have more!!! Geesh… I think I should be happy with the two I have for the moment and not think about the next child… 😉   Hehe… ok, coming back to the recipe today, this is definitely the best pasta I have ever made. Bottle-gourd in Coconut Milk

I’ve been playing along with the design of my blog for the past few days, and I finally seem to have settled down with the current one. However, I am not satisfied with the background. That is fine for the time being – I think I should take a break with all the blogger gadgets and just relax. Steamed Moist Chocolate Cake

I just came online not for posting anything, but then just saw that my page has passed 100 hits!!! Wow!!! Alhamdulillah, that makes me feel really happy. Thank you all who have been visiting and dropping in comments, it is certainly encouraging for me as a new blogger. Today the climate is awesome in Dubai, with some nice drizzle, but then I am stuck at home, thanks to my little one’s bout of flu. Another thing about today is that I have completed my certification course related to my profession, that I have been longing for, for quite some time and I am kind of sure that I will come out in flying colors.   Let me dedicate this lovely cake to the great feeling of today. Koonthal Chorum Parippum – Squid Rice with Dal

  Some days are not meant to be the way it is meant to be. Like, for the past couple of weeks, traffic has been at its worst and reaching office and going back home has been a nightmare. I would sheepishly admit to my colleagues that more than working, it is the driving (or rather sitting in the car idle!) that is making me feel tired. Once you are home and you are late, you are definitely in no mood to do any cooking, but then you have to, so what you try is minimal cooking! :)This is my mom’s signature dish. My mom makes it to perfection and my elder daughter, Rasha loves it so much that this is the only meal that she goes for a second serving!!! I have made it a couple of times and it has turned out great, even though  I will not compare it…

Qamarddin Lollies

It is so very true that necessity IS the mother of invention. It is only when you try to finish off some grocery with you, which you very well know may not push out in the near future, that you invent ways to finish it off without much fuss. During last Ramadan, I had bought a packet of Qamarddin, which is basically preserved dry apricot sheets, to make juice out of it. Even though a tad bit time consuming, I used to love the end result, though nobody in my house were very fond. Once Ramadan got over, I knew for sure the remaining sheet is going to lie in the refrigerator and expire to glory. That is when I though, why not utilize it into a pudding. I googled for a recipe online and got one recipe, which unfortunately gave me something which looked like a juice rather than a pudding!…

Chakkara Gothambu – Wholewheat in Jaggery

     Actually speaking, breakfast is one meal which we do not have that heavily in this part of the world. With traffic starting as early as 6:30, you are forced to rely on quick fixes like oats, upma and the like to fulfil your breakfast necessities. It is only during the weekends that breakfast is lavish, but still it’s never the dosas and the idlis, but more filling variety, you can say. One of my mom’s favorite breakfast meal is what I am featuring today. Due to the ease of making it, it’s my favorite too. The thing is that you have to remember to soak the whole wheat the previous night and the remaining process is a cake walk, thanks to pressure cookers. I always wonder, what I would have been without a pressure cooker!!! OK, without much ado, off to the recipe…     Updated on February…

Easy Coconut Milk Pudding

   This was one dessert I had made with all leftovers I had. It was a depressing day – my whole family had gone to India and loneliness was creeping in. And me, being the sweet tooth, naturally went on to depend on a dessert. This was whipped in no time and set in very little time as well. Was really spongy and melt-in-the-mouth. Carrot Sago Semiya Payasam

This is a recipe close to my heart. Why so? Because I made it up by chance. 🙂 Sometimes, what you concoct without realising how the end result will look like turns out to be the best thing that you have done in your life! I would rate this as my best payasam effort so far. It is a mix of semiya payasam, sago payasam and carrot payasam put into one and the end result was really fantastic. We first had it as payasam then we waited for it to be solidified and had it as dessert for night as well. The way to perfect rice…

This post has a motivation behind it. Till I took specific interest in cooking, I was really not bothered about how my rice used to be. Normally for lunch, we have Palakkadan Matta, for which there is a standard preparing procedure in pressure cooker, which I follow to the dot and nothing goes wrong. As far as basmati is concerned, I have always made kanji with it. My rice used to be overcooked all the time as everybody kept telling me about the one glass of rice = two glassed of water policy, that includes my mom. Somehow, it has never worked for me. Another way is to cook in loads of water and then drain when the rice is done. Since for this method, you have to literally dedicate yourself to continously watch if the rice is being done and I really don’t have the patience for it. this…
