Chicken and Corn Quesadillas

The second country I chose to cook from under the “Oceanic Cuisine” theme for the Blogging Marathon #78 was Mexico. The cuisine from this country is so well accepted, thanks to the Nachos and Tacos that do rounds at almost all food courts! The world is coming to like the Mexican twist of adding chilli to chocolate (like this hot chocolate and these shots!) and not to mention, the Dulche De Leche!   I have been wanting to try quesadillas (read them as ke-se-di-ya) for quite some time, considering how easy it is to make them. I really wanted to make the tortillas (read them as to-ti-ya)for scratch, but as the dates for the publishing approached, I gave up on myself and relied on making them from store bought tortillas. There is one thing you must never miss in your quesadillas and that’s cheese! It must have cheese. The…

Bombay Masala Toast Sandwich

I would have never known of this simple yet delicious sandwich, had it not been the little food joint opposite to our office lane. Usually, I order food through our office boy. He knows what I like to eat, so he asks me and orders accordingly. One day, he suggested me to try the “Bombay Masala Toast” from this outlet and I didn’t know what to expect. I went by as he suggested. I didn’t find the sandwich so intriguing but as per my colleague P, it is one of the most sought-out street food in Mumbai. I was surprised to know that and then slowly got to knowing about the sandwich more.   The next time I ate it, I carefully dug into it seeing what each layer had in between it. One very important factor of this sandwich is the butter used. It always has to be…

Peanut Butter Banana Sandwich

After the Secret Recipe Club came to an end, Sarah started an event called “Fantastical Food Fighting“. Every month she gives a theme and a date to publish the post. The best part about this event is that you can join in if you want and there is no pressure to be doing posts. Most of the challenges require you to do continuous posts to remain a part of the group, which is not the case with this event. Hence I took a plunge and submitted my name. However, till date I haven’t been able to participate despite some interesting themes. But this month, I got the opportunity to be a part of it and here I am!   The theme for this month is PB&J, which is the short form for “peanut butter and jelly”. The recipe needed to have peanuts and a fruit in it. All I…

Chicken Shawarma

At times, my mind gets stuck in the past, even though I don’t like it. However good our present may be, sometimes we allow our mind to loiter in those forgotten lanes of memory. The memories may be good and cherished, but those that you wish to keep aside so that your peace of mind is not disturbed is usually the ones that always end up coming to the forefront. Such times, it becomes imperative to remind ourselves that the best weapon during those moments in the remembrance of Allah. Life is definitely not intended to be a catwalk and we have to equip ourselves continuously with what is required to keep ourselves protected from the whispers of the cursed and to keep our faith. Here is an article I found during my casual browsing that will ease up a lot of matters at heart, InShaAllah…   I have been…

Be My Guest – Cheese Chilli Carrot Sandwich

As I enjoy my vacation back home, I am so glad that a few bloggers obliged to chip in and keep my blog active during my presence. One of them was Shweta, who blogs at Merry Tummy. I don’t think she needs any introduction. The straightforward person that she is, both of us don’t believe in buttering each other so  I will leave my introduction, nice, short and sweet, just like she did in her post! Hehe… I was already a guest at her place a couple of months ago and I am so glad to host her this month as my first guest for the month. Do stay tuned over the month for a couple more guest posts InShaAllah, tweaked in between with a few of my posts as well. Yes, I understand, why this compulsion? I don’t know but I really don’t feel like leaving my blog hungry…

Tuna Egg Wrap

At times, life is like as though you are looking into eternity – an endless pit with seeming-less options. Many of us go through this – your thoughts don’t make sense, your feelings seem out of place, the hectic rush of life pinches out the maximum of your energy… At times, you feel you could just put a full stop to everything and rush back to those recesses of your mind, where your comfort zone rests. But is it a possibility? Just the time I feel everything is getting back to normal and maybe I can put my demons to rest, all of a sudden I keep getting my surprise hits. Yes, it frustrates me as to why can’t life be the way I want. But then… there is a technique of bringing us back to ground realities and making us realize that life is actually NOT what we want,…

Chicken Paratha Sandwich

Just sharing this beautiful slide for today… only demonstrates how loyal Allah is to us… such a mind-pleaser, such an assuring thought… Sometimes, a weekend calls for a lazy dinner. When umma is not around, I hesitate to go out with the kids, especially on Thursdays as coming back from work makes me feel really tired and yes, Rasha hates that excuse!!! One Thursday, when I had a balloon-faced Rasha sitting in the hall, upset with me for not taking them out, I whipped up this easy, ready within 30 minutes dinner and you wouldn’t believe how fast that “balloon” deflated! She and Azza absolutely loved their sandwiches to the core. Nothing much fancy, but really filling… Chicken Paratha Sandwich Serves 3 Ingredients: 250 gm boneless chicken, chopped into tiny bite pieces 1/2 tsp turmeric powder 1/2 tsp red chilli powder 1/4 tsp garam masala powder A generous pinch of…
