Blueberry Chia Overnight Oats

The days are literally dark now. The morning prayers – Fajr – is almost around 5:30. While it is time to send Rasha off to school, it is just like evening, the sun is not to be seen and the light is all faded away. It is getting cozier so waking up in the morning is getting tough and since the sun sets too fast, all I want to do is to go off to sleep once I land home, without even eating anything. But then you can’t do that when you have family to feed, right? 🙂 I totally love this season irrespective of the flu bouts going on. I love the cozy feel of this climate. Can’t wait for it to roll on completely…   Till then, sharing a super easy breakfast for you. Overnight oats is usually my go-to breakfast at least once a week, since…

Grilled Pineapple Pecan Overnight Oats

Time to write about the weather! Come October and my favorite part of the year starts. This month and the next are the best for all sorts of outdoor activities – barbeque, beach, road trips, just about anything. You can shun the malls and be out more. The sun doesn’t hit you hard even in the afternoons, which is such a joy and relief, Alhamdulillah. Even though we haven’t moving out much recently thanks to HD’s packed schedules, I am already looking at options to go on for the coming months – some long drives and trips that will keep the kids engaged and will free up our minds too. InShaAllah, let’s see how it goes… 🙂   Meanwhile, coming back to one of my favorite lazy breakfast – the overnight oats. I have already shared a few on the blog previously and today what I have is just…

Carrot Pistachios Mini Cakes

My last two posts were typed and scheduled in advance. I was somehow sure that the long weekend would leave a hangover on me and I wouldn’t want to do live posts. So the hyper blogger is me just typed it out and placed it on schedule. 😉 I wouldn’t say we had a fantastic Eid. We were mostly at home. The day of Eid was loaded with cooking, since HD decided to call in some impromptu guests and I was caught off guard. With just a couple of hours and a little more to finish the whole process, it was indeed a struggle but thankfully HD was of good help too. A big pot of Thalassery Mutton Biriyani, along with a roast chicken, and the normal sides – raita, chammanthi, onion soaked in vinegar and store bought pickle, since my trial of Kadumaanga (a Malabar raw mango pickle)…

Chia Oatmeal with Cinnamon Apples

Even though I am not a fan of oats as such, most of the time I resort to it as it is the easiest breakfast that you can make and ensure that you have some. With so many reports emphasizing on how important breakfast as a meal is for our overall health and weight maintenance matters, it becomes imperative to have a filling breakfast, how much every fast life may be. That reminds me how breakfast is a lavish affair back home, and how sometimes meals are divided into two – a glass of sulemani with ripe plantains, boiled eggs and biscuits to begin with and moving onto a spread which can be a full meal in itself. In a fast paced life like that of UAE, we are mostly dependent on quick fixes like cereals and oats.   Sharing with you today, a vegan breakfast which is easy…

Cookie Batter Granola

A month after the other seems to come in full speed, and I guess it comes faster when it is for something exciting! Even though I am very new to the Secret Recipe Club – this is my third post, I am seen excitedly waiting for the email to come and start my browsing through the assigned blog for the recipe of my choice to try! So here I am with this month’s post… 🙂   I was assigned a blog with a very interesting name: Join us, Pull up a Chair. Heather, who runs the blog, basically asks us to get comfortable, feel at home and to read on. 🙂 I loved the name, seriously! 🙂 She has a variety of interesting recipes on the blog and since I was somehow fixated at wanting to make some granola, since it has been a long time since I had…

Banana Date Crumble {No Sugar!} ~ Ramadan Guest Post for Muslimah Bloggers

I am very excited, Alhamdulillah to be on the Muslimah Bloggers as a part of the month long Ramadan series, where you will find Muslimah bloggers from all over the world, chipping in with their views and their insights about this holy month. It makes me feel honored to be posting on this lovely platform that unites a niche yet strong base of bloggers, dabbling with a variety of subjects in a Halaal way. May Allah make your endeavor successful and everlasting, in this world and the Aakhirah… Aameen…   They had invited guest posts for this month and I quickly volunteered to post for the second of the month, which is today, Alhamdulillah. While trying to figure out what to give, my eyes fell on this “too-easy-to-believe” sort of a dessert. A healthy crumble, with two of my favorite fruits, and what more – no added sugar! To…

Oats Kanji ~ Oats Milk Drink

As much as focusing on our inner balance during the coming holy month, it also becomes imperative that we have good nourishing food to keep us going for the whole day. Nowadays, there is so much emphasis on what to eat and what not to eat. This left me intrigued as to how were the fasts during those days of the Prophet – when there was hardly any food to eat. There is emphasis on two foods – dates and water. Dates is a super-food that nourishes the body and brings it back to its normal state after fasting, without causing any disturbance to the balances. Water is also the same. There is no mention of any other kind of food – they used to eat whatever was available. And we plan and plan on what to cook and eat. I guess we need to reflect on the irony……

Wholewheat Oats Pancakes

I must seriously say that I am so glad that there are many of my readers who look forward to the 3 back-to-back series on the blog. Ever since I started with smoothies a few months ago, I have been able to do one series every month without much trouble, Alhamdulillah. Sometimes, it is challenging to come up with a theme but somehow browsing through all the recipes does give me ideas as to how to go about it. 🙂   After a little contemplation, I decided to an interesting theme this month, and that is “pancakes”! I love pancakes, totally… If I were given a chance to make it as breakfast every other day, I would happily do it. Unfortunately, I have folks at home who will accept it only once a month and not more than that. 🙁 There are times when I make small quantities that…

Banana Peanut Butter Overnight Oats

A beautiful slide I found and wish to share… wish we could be at least a part as generous as the Creator of the sun!     Another to the list of overnight oats for all of you to try. Banana and peanut butter is “marriage made in heaven”, as they call it. They just go very well with each other. All you need to do is combine them with your oats and have a magical experience! Peanut butter can be slightly tricky, so melt the butter in your microwave before you mix in, or else you may have a big blob in your oats the next day morning. 😉 Bananas and I are BFF – you give me a banana and I am a happy monkey! It is one of the fruits that will be there in my house any time of the year. Hehe…   Posted on…

Saffron Olive Oil Cookies

Life can give you a lot of unexpected turns. Last night, we were shocked by the news of a cousin, who met with a horrific accident and is now battling for his life in the ICU at the hospital. All we can do at the moment is continuously make Du’a for him and hope that Allah has something better destined for him and his family, InShaAllah… As I am battling my inner thoughts and emotions, I see the below verse in the morning: “No calamity befalls, but with the Leave of Allah, and whosoever believes in Allah, He guides his heart. And Allah is the All-Knower of everything.” (Surah At-Taghabun:11) It keeps telling us that we are so powerless in front of the Superpower… May Allah give him shifa soon, his family strength and give us the aafiyah to serve Him in the way He likes, so that we die…

Fig Almond Overnight Oats

Just looking at the picture, I wish I was having that oats right away… hehe… My newly find love is dried figs. I used to never like figs before, despite knowing that they are one of the food mentioned exclusively in the Holy Quran. Once on a purchase spree, I bought some dried figs and tried them and then there was no looking back. This is now there on my grocery list as a regular purchase. Try substituting your biscuit and chai with two to three figs along with a few almonds as a mid-morning snack, and nothing like it, I tell you! It is so filling and really nutricious in its own way. Regular visitors of the blog may remember this delicious Anjeer Kheer that Farrukh had bought along during her guest post. This is hopefully a start to using figs more in my cooking. Before I move…

Apricot Yogurt Granola Parfait

Remember the granola post a few days back? Well, this was one recipe I created with them. I so badly wanted to bake some granola bars with them, alas I ended up eating most of it with my milk and the kids finished off the rest by taking small bowls of them to munch on while watching cartoons. The pictures are not very clear since I was in a rush to carry them with me to office and sometimes, the camera acts really weird, as though it knows that time is limited! 🙁   I love breakfasts like these, just like overnight oats – you can find two ideas already on the blog here and here – which becomes easy and handy to carry to office especially when time in the morning is really too tight. The apricots can be substituted with any fruit – figs, berries, the choice…

Oats Butterscotch Cookies

The Home Baker’s Challenge was pretty active for more than a year but after the bun challenge, for which I baked these delicious Iyengar Style Khaara Buns, Priya akka decided to give a break to the event and restart in September. Since she was still occupied with lot more matters, she was not thinking of restarting the challenge but a small message and the plethora of support that came by encouraged me to host this month so as to restart the event.   So here I am as the host for this month, and the theme given was “Baking with Oats”. I had chosen a few interesting bakes with oats, since now it is one ingredient that has grown away from just being used as porridge. One of the recipes I had selected were these cookies, that I had baked off the wrapper of the pack of Hershey’s Butterscotch Chips…

Basic Granola

Sometimes, I go through a few of my old posts. The ups and downs I went through, the feeling of loss and dejection I went through… but Alhamdulillah, Allah has been so kind, that He showed me a lot of signs, bought in a few people into my life as soon as He took away, and made me realise that life is a test of patience, a real test of whether we are His true servants or not. This verse always hits the right code whenever I read it. It just shows how loving and merciful the Lord is. In many places in the Qur’an, He has clearly said that He guides whom He will. Only if we are able to believe and trust in His Qadr can we feel the sense of patience and calm. I don’t know if I have shared this video on the blog before, but this one…
