Cheesecake in a Jar ~ Microwave Cheesecake

Did the title intrigue you? Yes, today I am going to share how to make a baked cheesecake in a microwave! Isn’t that interesting? A cheesecake is something that I avoid making just because I am scared of the calories that come with it. Not that I am really bothered as such, but still… There is something addictive in a cheesecake, that you feel like having more and more of it. So when I saw this cheesecake in a little book called “Mug Cakes”, I had to try it. And boy, wasn’t I happy? This tastes as good as any baked cheesecake! The only thing you have to be careful is about the microwave time – do NOT microwave it at one stretch, instead you do it in batches, so that you have your microwave in one piece! Since it has egg in it, it can built up a…

Coffee Walnut Mug Cake

Coffee is a close second when it come to baking, after chocolate. I love anything with coffee in it. If it has both, then nothing like it! 😉 Coming to our second recipe in the 3 back-to-back microwave treats after the bread pudding, here is a delicious coffee mug cake studded with the crunchiness of walnuts. This is apt for a lazy breakfast, or a quick treat that you do not want to share. I have this problem that when I crave, I make my little treat and try to eat it as quickly as possible, only to see one of the kids coming into the kitchen at that time, when my mouth is fully stuffed. Azza somehow doesn’t bother since she is not much of a foodie, she takes what she wants and moves out. But Rasha will be all inquisitive, “Ummi, are you eating something?” “Why is…

Microwave Bread Pudding

Alhamdulillah, so far I have been having a good time organizing the 3 back-to-back posts. I am glad I have received some very good responses for the series as well. Since from last month, I have started the book review series too, I am planning to space out my series from the new year, InShaAllah. I may move the 3 back-to-back to becoming a bi-monthly series and making the book review a monthly one so that my books move in the shelves and don’t rot! 😉 Let’s see how it goes…  I would love to keep my blogging journey as stress free as possible, so I have to make sure that I don’t fall into too many plans at the moment! 🙂   OK, so what do we have in store for this month? I guess when you saw the title of today’s post, you must have got a…

Chicken in Hot Garlic Sauce ~ Microwave Cooking

Being the hyper blogger I am, I have decided not to keep this blog inactive, even though I will not be much involved with it till early September, as I travel to my home country to relax, just like I already mentioned in my last post! It is after almost four years that I am going on a long break of 5 weeks – all my previous visits including last years was maximum upto 2 weeks – so you can imagine I am pretty excited about the same! 🙂   In between, I had started sharing a few microwave recipes, which you can refer to here. This is the last meal I cooked in the microwave by referring to this recipe, after which I have not tried because I found it easier to cook on the gas stove than otherwise. However, with the summers peaking and the kitchen becoming really…

Gajar Ka Halwa/ Carrot Halwa ~ Microwave Method

The other day, I was just thinking to myself… being a working mother makes me miss a lot of little joys in life. It is not that I am not enjoying my current life. I do love being super busy and having no time on hand, which gives me hardly any free time to think about anything but at times I crave for some leisure time. The time when the kids and the HD is off to their respective morning places and I could sit in the hall with my big mug filled with hot chai, slowly sipping on them and thinking about sweet nothings… Eagerly awaiting the kids’ warm hugs and kisses when they come back from school… Serving them lunch and putting them off to nap… Being with them when they are at home… In fact, I miss that time. My girls are growing up so fast that…

Baingan Ka Bartha/ Brinjal Curry – Microwave Cooking

I had written some time back that I would share my microwave cooking experiences but after the initial post, I just forgot to share more. Sometimes, I have to move around my drafts and ensure that I cover everything without making it look repetitive. Once I got my cooking range, the microwave cooking saga met a natural end, however I am already thinking that I must cook at least once in a month in it to get a hang of it.   Baingan Ka Bartha is a mashed up brinjal curry, very famous in the northern part of India. It is surprising that I have cooked this on stove top many times but has not got featured on the blog till now but before the normal version, I am posting the microwave version! Sometimes, it is good to make exceptions, right? 🙂 In fact, the reason why I never blogged…

Microwave Meals ~ Simple Chicken Curry with Plain Rice

A couple of weeks back, I had put a status up on the blog’s FB page as to how many of you would be interested in having a look at some microwave recipes. As you know, till now, I was struggling with my kitchen, which Alhamdulillah, is slowly coming to normal. Till then, majority of our meals were hotel food, with very little that I cooked at home. The only major thing I used to make was cakes! Hehe… It took me a lot of thought to start cooking in the microwave. Yes, I know, there are some health hazards due to the quick cooking happening in the microwave, there are a lot of articles related to it all over the net and otherwise. However, I feel it is a blessing when you get fed up of having food from outside every time! I haven’t cooked much meals in the…

Vanilla Mug Cake

Some more motivation… I guess this is why I have put up this blog in first place! Hehe… I am a queen of cravings. I keep craving for sweet. I know it’s just not good, but sometimes, I just can’t hold myself. Only God knows when I will put up all that weight that I had so painstakingly lost! I put on weight faster than I lose – duh! – and that explains all the frustration! Everyday, I tell myself that I am going to start at least some form of exercise, but my whole schedule is so topsy turvy that I am just not able to accommodate anything at the moment. But InShaAllah, looking forward to a few movements on the coming days, and I guess, I would be able to play around with my schedules a bit to accomodate in 20 minutes at least in a day! Till…

Hasty Chocolate Pudding

This was shared through Whassup, wanted to jot it down here for all of you and myself for future reading… Some beautiful words from Sheikh, Abu Ishaq al-Huwayni: Don’t let anyone see you, except that you are happy. Let them always see your smile and if things get difficult, the Quran is your Paradise. If loneliness starts to hurt, send your supplications through the heavens. When people ask how you are, praise Allah and smile. When you see an ant on the sidewalk, avoid stepping on it, seeking therein the Face of Allah; for perhaps He will have mercy on you as you had mercy on it. Remember that the ant glorifies Allah, so don’t cut of it’s glorifying by killing it. When you pass by a bird drinking from a pond, don’t go so near so as to scare it, and seek therein the Face of Allah; perhaps He…

Chocolate Orange Mug Cake

Starting from where I left yesterday, my typical Ramadan day starts from 45 minutes before the prayer of Fajr. I warm some milk for me and B, and make tea for umma, D and HD. Our meal is mostly nenthranpazham (Kerala plantain), digestive biscuits or maybe milk bread to go with it, followed by some dates and a couple of glasses of water. If I was in a good mood the previous day, I do make a quick mild cake to avoid the bread. After prayers and some Quran recitation, I doze off for sometime, before waking up to rush for work. Thankfully, work timings are only 6 hours so that means we can start our travel back home earlier, however with all offices leaving at the same time, the drive on the roads could go upto one and a half hour, which is literally really tiring considering the killer…

Eggless Brownies in Microwave

There is something about cooking… how much ever you try, you still feel that there is lots more to try! I am somebody who keeps wanting to make something new every other time. Unless I am in a really lax mood, which I had been for the past few months, I keep making new dishes almost every other day. The main challenge is making something that would suit everybody’s taste buds. My B is my biggest support – he loves the variety I bring in and is usually positive about whatever I cook, as long as I give him a big share of the dessert that I am making, sometimes making me wonder whether I am the BST, he seems to be a bigger BST!!! Hehe… My HD takes whatever I make with not much remarks, but if he likes it, he would ensure that he tells it to me….

Chocolate Mocha Mug Cake

I really don’t know how I missed to share with all my readers a lovely snap that I managed to take while stuck in traffic during the last weekend. Yes, I know, it’s not the best time to enjoy such a glimpse when you are frustrated and in confusion whether you would reach office on time, but then how can I just ignore when the canvas of the Almighty was splashed with beauty?   I’ve always been open about my love for beauty, my love for nature and anything that looks beautiful. Beauty depends from person to person. I really believe that we should never question another person’s beauty visions because it is like questioning his own existence! “Beauty lies in the eyes of the beholder” – so true it is… The day I clicked this, the day was quite hazy with some clouds, but the sun just refused to…

Brownie in a Mug

After that huge cookout on Friday, my head is totally blank. Totally!!! I guess it was all that food and so much strain… Even though I enjoyed it to the maximum, it kind of drained me off completely. I can really feel it in my work that I am doing at home! It may take a few days to get back to my normal self, I guess… As of now, I am planning at some minimal cooking, only in order to float and not go hungry!!! 🙂 Yesterday I just didn’t cook, and I plan to go light  today as well.  I don’t have dinner as such, I can always ask HD to eat from outside and the only thing my little one needs is a bottle of milk! Thankfully, I have quite a bit sitting in my drafts that even if I don’t cook, my blog will not go…

Three Nut Brownies

I always feel that there will hardly anybody who hates chocolate, unless they have some deficiency!!! Wait a minute, just because I love anything chocolaty, it is not necessary that everybody has to love it, right? Right!!!   I am one chocolate person. Anything with chocolate in it, I am game. That very well explains why I have never been able to stick to my diet resolutions. I control quite a bit, and then a big bar of chocolate laden with hazelnuts or almonds comes my way and my resolution goes the opposite way. 🙁 I seriously am searching for my long lost will power to lose weight. Thankfully, since mom is around with me, she’s holding me back from baking for the time being.   This is a super duper easy brownie recipe, cooked (cannot say baked!!) in the microwave. When you are craving for something sweet or if…
