Qamardeen Tea Sorbet

  Once Ramadan is over, most of the households in the Middle East would have a leftover pack or half pack of dried apricot sheets, after making the Qamardeen drink. At least, I do. Most of the time, I end up drinking all of the leftover juice, so I make it in small batches to avoid over indulgence. Hehe… I find Qamardeen a very addictive drink, since I love apricots, whether ripe or dry. So it was no surprise when this trial of making this Qamardeen Tea Sorbet was really loved by me and even the kids!   Instead of just making it a normal sorbet, I spiked it up with some black tea, that was  cooled and then blitzed along with the soaked qamardeen sheets. The tea gave it a very subtle taste. After all, I consider sorbets as a very guilt free dessert, since there is no diary…

  As we bid farewell to this blessed month and move on to Eid-ul-Fitr, it is more like stock taking of what we have achieved in the month. Ramadan is a month where there are a lot of restrictions – whether it is food, water or relationships; when there is more emphasis on giving away a part of your wealth to charity – compulsory and otherwise; when there is the requirement of keeping a tab on our habits and characters.   Coming to the second post of the series of “Vegan Desserts”, after the Dates Granola Bar – A sorbet is a perfect frozen treat! What is a sorbet? A sorbet is nothing but fruit and sugar. You can actually make sorbets without fruit too – just water, flavoring and sugar. But let me concentrate on sorbet with fruit. A sorbet is one of the easiest and guilt free frozen dessert that you can have. If made at home, you can use minimal sugar and make it almost 100% fruit pulp, like I have done with a whole papaya.   Time for this month’s 3 back-to-back! Mango Coconut Milk Pistachio Ice-Cream

  It is time for this month’s Shhh Cooking Challenge. After taking over the reins from Priyaakka, Mayuriji has been doing a fantastic job at ensuring that the challenge moves forward.   This month, the theme was “Mangoes”, as it is the fruit of the season and our partner was supposed to give us two more ingredients to go with the theme. I am paired with Anu this month, and after a brief discussion, she asked me to make something with condensed milk and nuts of my choice. Since I am on a vegan diet and wanted to make something that I could eat too, I requested her if she could change the condensed milk to coconut milk, and I got an instant nod. Blueberry Cheesecake Popsicle

  Today is our wedding anniversary number 12, Alhamdulillah. Through all the ups and downs, we have managed to touch this number and InShaAllah, I am only hoping to see more better years ahead. 🙂 Reading through Huma’s latest post actually made me reminisce our initial years of marriage. With me knowing nothing about cooking – totally zero – HD took all pains to teach me the basics starting from how to make tea to how to make a decent curry. That time, blogs and YouTube wasn’t really well used, so it was all dependent on a call to umma and his training. Since I literally hated cooking, I would just do some adjustment and cook just anything, not even making sure whether it was palatable and he would silently eat it. Mint Milk Ice Pops

  After the Chocolate Popsicles, here is the second one!   I am not a big fan of mint as such, but I do love its aroma and it’s flavor. Off late, I had got hooked onto mint choco-chip combination and especially love the Lindt Dark Chocolate Mint – OK, now I am off all that for the time being but I have the right to let my mind wander aimlessly over my past love, right? 😉 One day, I landed up with a bunch of mint leaves and I didn’t want to let them get spoiled.   Month by month seems to be flying so fast! It makes me so excited to be getting in the themed back-to-back posts as well… With the summer months starting in the country I stay in, summers are slowly starting, though this time, it seems to be coming at a slow pace. Everybody seems to say that it is to make the summers terrible.   Last weekend we had a small marriage in the family. Alhamdulillah it all went well. Then the kids just decided that they were going to stay over at my cousin’s house as she has a daughter who is a year elder to Rasha. Actually, when schools close, this is an anxiety for me – they would definitely want to go and stay over. I don’t blame them. They don’t have friends in the building we stay and they feel bored. Easy Chocolate Icecream

  Something that happened last week, wanted to record it over here: *Scene* Azza is standing with a glass behind a frantic me, who is trying to finish off my work. Azza: “Ummi, I want water!” She can very much go and take water from the dispenser but she chooses to nag me for it. Me (a bit irritated): “Mole, you can see I am busy. I just have two hands. Please do take water from the dispenser.” Azza (with a very matter-of-fact look): “Ummis are not supposed to have only two hands, they should have four hands!” She turns away and goes to take water. *Facepalm* I guess I leave it at that… 🙂   Just yesterday, I was talking about temperatures lowering and I am posting an ice cream recipe today! Paal Ice ~ Milk Pops

  With the month of Ramadan coming in at any moment from now on, something to remind us of our purpose of life…   With the heat becoming unbearable at times, all I crave for is loads of water and something cold. Ice cream seems to be something that is wanted all the time. The easiest that you can make are these milk pops! Paal ice, as we all call it back home, always brings out fond memories of visiting the beach. When we were small and used to travel home during our summer vacations in July and August, it used to be mandatory to have at least one visit to the beach, though it would never be limited to one. The fourth guest of the year! Days are moving fast and the climate is changing as well. From winter (was there one this year???), we slowly move towards higher temperatures. Strawberry Frozen Yogurt

Just keeping my introduction short for today, a powerful statement…   Strawberries are slowly fading, though not completely. It is just getting slightly a bit expensive every week. I still keep buying boxes whenever I find them at a good deal. I am looking at making some compote and topping them up for some pannacotta… but at the moment they are still a part of a dream! Ahem… hehe… meanwhile, let us enjoy this really simple strawberry fro-yo! I have adapted this recipe from a cut-out from one of my favorite food magazines, BBC Good Food.
