Time for the Baking Eggless challenge for the month! I waited till the month end to post this… hehe… Last month, I skipped the challenge, which was to make the famous Creme Caramel without eggs. That was definitely a challenge but I somehow didn’t get the time or opportunity to make it, or maybe I didn’t make time for it as I was on a mission to somehow reduce my sugar related baking and cooking – still you will find a lot of loaded recipes in here, which were cooked long back but now one by one are appearing! Eggless Dark Chocolate Nutty Brownies

It has been ages since I baked brownies… and it has been quite some time since the Baking Eggless challenge. Gayathri had decided to give a little break to the challenge last September to give it the spark that was much needed. Eggless Hungarian Kipfels

Very well knowing that I would not be able to participate in the next two challenges, even if I try my level best, I decided to participate in this month’s Baking Eggless Challenge. This month, Gayathri had challenged us to bake Hungarian Kipfels, which is a croissant shaped rolls/ cookies filled with apricot jam inside. Now, just like Gayathri had mentioned, the recipe for kipfels is really confusing – same pages call it rolls, some cookies. The link that she provided was this, which was actually a bit off track for me, considering that it was not a recipe which used totally halaal ingredients. Eggless Italian Rose Cake ~ Torta de Rose

It’s been two months since I have participated in the Baking Eggless Challenge. I don’t think I should elaborate the reasons for it, however this month as soon as I saw the recipe, I knew I had to try it. No, no, please… don’t get scared by the name of the dish! It is just a beautiful looking braided bun, encrusted with sesame seeds! For this month’s Eggless Baking Challenge, Priyaakka had challenged us to these beauty of a roll! And definitely, I enjoyed baking it as well as the family enjoyed it over a cup of hot chai! Eggless Creme Brulee

Creme Brulee is an egg based dessert, similar to a custard, but with a crunchy sugar topping, which is normally created by sprinkling the sugar on top and caramelising it with a blow torch. For December’s Eggless Baking Challenge – by the way, completes its two years of successful running!-, Vimala had challenged us with making this dish, that she had suggested from Sanjeev Kapoor’s site, into eggless. Chocolate Almond Tart

Time for another challenge!!! For the Eggless Baking Challenge this month, Priya Srinivasan had suggested the Ferrero Rocher Tart and many of us did take it up very enthusiastically. For the last two months, I was not able to participate because of Ramadan and Eid, so I did not want to miss this month’s challenge. However, when I saw the recipe, my heart sank. You must be thinking: “Duh? How come? It’s such a yummilicious challenge!!!” Yes, it is and that was the problem. I am supposed to be controlling my food intake, thanks to a lot of snide remarks coming from all sides regarding my weight (hehe…) and to break off all my control, comes this really un-ignorable challenge. There are some people in life, who have the amazing capability of lifting you up when you have the slightest doubt about yourself. I sincerely believe that such people have this God-given gift of being able to pep up somebody’s day and make them feel very confident about themselves. Eggless Crispy Doughnuts

Sometimes, you need to go that extra mile to push yourself to make something. Doughnuts have been in my mind ever since my interest in cooking developed and my relationship with yeast had improved. Eggless Tiramisu Cake

Finally, I am up with the cake that I made for our anniversary. I am sure youmust be thinking why I delayed it so much. OK, let me tell it like a story…   From the beginning of the month, I had zeroed on the Black Forest Cake for our anniversary. Come what may be, I wanted to make Black Forest. I love the flavors of the chocolate, cherry and whipped cream rolled into one, along with those chocolate shavings. Who doesn’t? I was ready to dedicate my whole weekend into it. Then came the monthly challenge for the Eggless Baking group, which was suggested by Sowmya of Nivedhanam. What it would have been? Tiramisu!!! Dah, now I am confused. Egg-less Amazing Dinner Rolls

I am glad to be a member of the Eggless Baking Challenge from this month onwards. The main reason why I took it was to widen my horizon and use my head a little bit when adjusting to eggless is to be done. I always look for eggless recipes mainly because they are quite easy to put together.   This month’s Baking Eggless Challenge is hosted by Priya of Enveetu Kitchen and her suggestion was dinner rolls. The recipe had just one egg for double the quantity I used, so the only little variation I did was to slightly increase the butter and whisk all the wet ingredients before adding the flour.
