Carla Hall’s Avocado Brownies

  Time for the second round of the Blogging Marathon #78! While I was scouring through the themes, I was a little confused on which one to select. Finally I ended up selecting the theme “Let Them Eat Brownies”! While I had gone through the heart attack of having to make three cheesecakes in two weeks last time, this time I thoroughly checked my drafts, ensured I had at least two drafts of brownies so that I had minimum baking. Lamingtons

  This is the first dish I cooked up for the Blogging Marathon #78 for the theme “Oceanic Cuisine” but got chosen to become the third post! Hehe…   I have been wanting to make Lamingtons since very long. The buttery cake surrounded by chocolate icing and rolled in desiccated coconut is definitely a treat for sweet lovers. I have never seen these pretty things being sold here anywhere – maybe I haven’t looked too far! – but going through many recipes and pictures were tempting enough to make me want to try them. Chocolate Honey Granola

  The tenth of the month, it is, and time for the Muslim Food Blogger Challenge! This month, the theme chosen was “Cooking with Honey”. We all know what honey is and how, just like coconut oil, it has gone from being super-food to notorious food back to “good food”. Did you know there is a chapter in the Quran called as “An-Nahl” (Chapter 16)?   Your Lord revealed to the bees: “Build dwellings in the mountains and the trees, and also in the structures which men erect. Then eat from every kind of fruit and travel the paths of your Lord, which have been made easy for you to follow.” From inside them comes a drink of varying colours, containing healing for mankind. Eggless Apricot White Chocolate Scones

  Eid just came and went. I am tired to the bones, I must say but in a good way. The lack of sleep is getting onto me, but Alhamdulillah, no complaints. On Saturday night, as soon as Eid was declared, I got to making chicken cutlets for our Eid breakfast at my aunt’s place, where my cousins did the Ela Ada. It was a bit of a pandemonium, since the mix I made for the cutlets were too little. Fortunately, I was able to whip up an extra small batch to make a decent amount of cutlets that everybody could enjoy. I also got to making some awesome cinnamon rolls for my cousins, which were totally wiped out. I will be making them again for the blog, since surprisingly HD seemed to enjoy them!   Last month, I decided to give the book review segment a miss as the last Saturday coincided with the starting of Ramadan.   During fasting, we are always on a lookout for a simple yet filling meal. I have always felt that oats is an amazing staple to have in your kitchen during this time. First of all, it cooks amazingly first and tastes good if made in your own twists too. You can keep your porridge simple and go for topping of your choice in the forms of fruits and/or nuts.   Today happens to be my elder one Rasha’s tenth birthday. Double digits… It is giving me goosebumps already. She has been excited since the beginning of the year, saying that she is going to be a teenager, but I corrected her saying she will not be one till the number changes to reflect the teen. She gave me a stare and accepted the fact that she has to wait a day shy of three years to get to that number. I thought as the girls grow up, it will get easier for me, however, that is not what is happening. As days pass by, I find them to be more demanding on me physically and emotionally. It makes me realize what I had thought till now was wrong. Mini Chocolate Mousse Cheesecake

  For those who asked me what I baked on our wedding anniversary, this is the answer. With the Blogging Marathon #76 being themed “I love, you love Cheesecakes!”, I had to make sure I did a cheesecake for our anniversary. 😉 And this was what I made. My original plan flopped so bad that I didn’t want to look at it for the whole day. We were left on our anniversary with no dessert/ cake. 🙁 Since HD isn’t a sweet tooth, I had no issues with not having any. We don’t make it evident to the kids about that it is our anniversary, so they were also not aware of the day. Chocolate French Yogurt Cake

  Weekends come with a sigh of relief. The long weekend actually made me slightly under the weather. My throat is sore and most of the time my eyes are puffed up thanks to allergic reactions. I don’t like the way I am feeling even though it has subsided quite a bit with the medication. Chocolate Croissant Pudding

  After the Mango Coconut Milk Pudding, here is the second one for the “Are you Pudding Me?” theme for Blogging Marathon #74. This easy yet delicious Chocolate Croissant Pudding is quite like a bread pudding but with croissant in it.   If you have school going children who are picky about their boxes, then I am sure one of your grocery purchases is a box of croissants. I buy a box at least once a week so that the box for one of the days is sorted out. Sometimes I end up picking up from a different store and the kids just don’t touch it.   We all love a good chocolate cake at home, especially me and my elder one, Rasha. We could sit and finish off it all in one sitting. Azza leans more for fruity bakes rather than chocolate, but once in a while she does love a bite. While browsing through my drafts, I was a bit upset with myself for not having posted this recipe. Can I tell you that this is the easiest chocolate cake you will ever make?   Don’t get me wrong. Be My Guest – Easy Chocolate Cinnamon Pots
