Checkerboard Cake with Ermine Frosting and Chocolate Ganache Drip

Today happens to be my elder one Rasha’s tenth birthday. Double digits… It is giving me goosebumps already. She has been excited since the beginning of the year, saying that she is going to be a teenager, but I corrected her saying she will not be one till the number changes to reflect the teen. She gave me a stare and accepted the fact that she has to wait a day shy of three years to get to that number. I thought as the girls grow up, it will get easier for me, however, that is not what is happening. As days pass by, I find them to be more demanding on me physically and emotionally. It makes me realize what I had thought till now was wrong. Just like every parent would do, all I can do it to tell her the way I can about life in general…

Mini Chocolate Mousse Cheesecake

For those who asked me what I baked on our wedding anniversary, this is the answer. With the Blogging Marathon #76 being themed “I love, you love Cheesecakes!”, I had to make sure I did a cheesecake for our anniversary. 😉 And this was what I made. My original plan flopped so bad that I didn’t want to look at it for the whole day. We were left on our anniversary with no dessert/ cake. 🙁 Since HD isn’t a sweet tooth, I had no issues with not having any. We don’t make it evident to the kids about that it is our anniversary, so they were also not aware of the day. Strange parents, aren’t we? 😉 It was only in the evening when we were out for a drive did the girls realise and Rasha was like, “Ummi, why didn’t you make a cake then?”    …

Vegan Biscoff Cheesecake

After the Gulab Jamun cheesecake shots, here comes the second cheesecake in the Blogging Marathon #76 under the theme, “I love, you love Cheesecakes!”.   And it has to be vegan! 😉 I have been wanting to try a vegan cheesecake since very long but somehow I never liked the idea. Maybe it is just the mental thought. I have been seeing this recipe and the amount of cashews that go into them, somehow doesn’t appeal to me. However, while this theme was declared, I had already decided I would try to make one, to know the feel and texture of it.     The recipe is very easy to make. The crust of the cheesecake is dates and walnuts, while the “cheesecake” portion is blend cashew cream, made up of soaked cashew nuts, coconut milk, some coconut oil and your choice of flavoring. I chose to make this with…

Gulab Jamun Cheesecake Shots

As the email from Srivalli came at the end of March, regarding participation for Blogging Marathon #76 for the month of May, I looked through excitedly and selected my themes. Once I confirmed to her, and got to planning how I go about cooking the dishes, a rude shock awaited me. I soon realized that I had hardly 16 days to finish cooking the dishes instead of more than a month, since we were having guests staying over at our house for a month and I wouldn’t be able to do too much of experimenting. You all know how it is when you have guests – you will have to stick to more routine cooking and do out-of-the-box only when they are willing to try. The first set of dates I selected, ie. from today to fifth would coincide with their stay. The second set of dates is immediately…

Chocolate French Yogurt Cake

Weekends come with a sigh of relief. The long weekend actually made me slightly under the weather. My throat is sore and most of the time my eyes are puffed up thanks to allergic reactions. I don’t like the way I am feeling even though it has subsided quite a bit with the medication. I am not sure how much I can rest over the weekend, but sincerely hoping to… Meanwhile, I am looking forward to the next week with a lot of excitement. Some little changes on the personal front is what I am expecting, InShaAllah… As we progress in age, we have to seriously look and take care of ourselves and hopefully this step will be the start to an array of change, InShaAllah… I will keep myself updated on IG so do follow me there! It will be just to keep myself motivated and not get…

Semolina Mango Cake

I hope you enjoyed the Mango Custard Verrines and Aamras posts in this month’s 3-back-to-back mango recipes. I have been wanting to bake with semolina since long but never got around it. My first attempt at making the basbousa, which is an Arab style semolina cake soaked in sugar syrup, was a dud, and I never got to making it again. Even though I have bookmarked several recipes that use up semolina, I have still kept it pending. There is so much that I am cooking and trying so some things do go off to the end of the list. 🙂   I made this cake to finish off a can of mango pulp that I had got at a deal. My mind went loitering at all options like ice cream and pudding but then I remembered the semolina mango cake recipe I had saved up very long ago….

Apple Dates Muffins

Schools just opened for the girls on Monday and that marks the start to another strenuous academic year. As the girls move up grade after grade, it comes with a sense of pride marked with a tinge of sadness… that very soon, our children will cease to be kids and be grown ups in their own right. Rasha will be soon entering her dual numeric age and she is so excited about it! She keeps telling me that she is going to become a teenager and while that statement does give me a mini heart attack, I remind her that teenage sets in only once the numeric age name ends with teen, so she still has another three more years to go. 😉 That did upset her a bit, but gave me a little relief too.   As they grow up, it does get a little difficult to handle…

Chocolate Beetroot Brownies

While almost all Indian schools started yesterday, I had some respite of not having to send the girls to school for a week more. I am feeling really relieved of having got an extended holiday from having to wake up really early on a weekday and bang my head over what to pack in their boxes. 😀 Five days isn’t much of a long time, but still… any small break is definitely welcome, since this is going to be the case for the next three months, InShaAllah…   And talking about the weather, we are back to getting hot. The rains have stopped and the winters have moved on. The mornings and evenings are still good, though a little humid, but the afternoons are getting a bit unbearable. The summers have to come in, isn’t it? So let’s get to having a lot of fluid and keeping ourselves hydrated…

No-Bake Blueberry Swirl Cheesecake – Guest post for Ashee’s Cookbook

A request for guest posts always excite me. I don’t know why, but I love the feeling of being asked for a guest post. It feels like a virtual invitation to their home, and I always love visiting homes, that you know you will feel great as a guest. 🙂 Thank you Asheera for your warm invitation… 🙂   Since my parents were around, I did ask her some time to work on her post, so when I got free, the first thing I did was to see what I can give her. My mood for cooking is just slowly starting to kick in but I didn’t want to delay her. That is when my eyes fell on this lovely and pretty looking cheesecake that I had made sometime ago when the whole family was around. I have hardcore cheesecake lovers in the family and whatever cheesecakes are there…

Hummingbird Bakery Blueberry Muffins

It is already the last Saturday of the month! Wow! I thought doing once a month would be a cake walk, but coming to see, the one month itself passes off in a jiffy! 😀 You can see the previous book reviews here.   Most of the book adorning my shelf seems to be baking book, and that too with a majority of sweet bakes. I don’t know if it is a matter of pride or shame. Hehe… Today, I chose to review this little book that I have in my collection. Everybody must be familiar with Hummingbird Bakery, which is like a must-go for cake treats in London and how famous their bakes are known to me. I have gone to their outlet in Mall of the Emirates sometime back with the kids. While the kids enjoyed their cupcakes, I gorged down on their pistachio loaf along with…

Marbled Classic Banana Bread

From the beginning of this year, life has been hectic. With parents around, the kids act weird. That’s how all grandchildren are supposed to be with grandparents around, right? I sometimes feel like a screaming zombie, who keeps making noise for nobody to listen. It is an absolutely frustrating feeling. 😕 But there is nothing much we can do. My parents leave in another two weeks and already we are feeling a tinge of sadness due to this. The girls are already eating our head to send them off for their summer vacation on their own. Being working doesn’t help since I have hardly a month off on my hand and their vacation is nothing less than two months, which is a lot of time. Each vacation, they complain of getting bored and how their friends are spending the whole vacation back home. I am fine with the idea…

Chocolate Hot Fudge Pudding Cake

Ever since this year has started, there has been an awful level of lethargy associated with the blog. I am not sure why is that so. I have heard many bloggers tell me that after a particular stage, we all face a lack of interest in the proceedings – whether small or large. I am just looking at a small example. I still have the 2014 recipes to be properly done into recipe cards. There are more than 200 posts, and I am not having any motivation to do it. I try to recall how I did it for the other posts, but I am not able to get the hang of it. Then I tell myself, no, I am not going to stress myself over it. 🙂   Just taking back from completing four years of blogging, today’s post happens to be the post #1000 on “The BST”….

Coffee Walnut Cake with Mocha Cream and Candied Walnuts

I don’t whether whoever said children are like angels were in his or her right frame of mind when he or she said that. 😀 I really don’t know… 😉 The little munchkin is no longer little. Azza completes 6 years of life on earth and steps into her seventh year. Alhamdulillah, I am blessed with two that drive me up the wall as much as that can love me to bits. It would be too cliched if I use words like “I can’t believe that it’s been 6 years since you came down into my hands!” 😀 All parents go through similar set of feelings… I am sure of that… She may a little imp at home but Alhamdulillah, she is very well behaved when she is in school and otherwise.   I only pray like every mother would for their child, that He blesses her with the…

Wholewheat Date Cocoa Muffins

Time of the month for posting the challenge for the Muslim Food Bloggers! Last month, if you remember, we had started a new challenge among a small group of bloggers, and my first post was the Ma’amoul that I tried from the blog that was assigned for that month. This month, the challenge was to cook with a particular ingredient and the ingredient that was provided to our team of bloggers was “DATES”.   We all know how important dates is to a Muslim. There are so many mention of this humble fruit in the Qur’an and Hadith, so much that dates are considered one of the fruits of paradise. Dates are the best substance to open your fast with. Dates was what, when our revered Maryam (AS) suffered from birth pangs while carrying Isa (AS), she was offered to ease her pain. “Shake the trunk of the palm toward…

Blueberry Loaf Cake

Blueberries are like my new found love. I have been buying them, eating them and adding them into everything and anything possible. So much as that my drafts even reflect how many blueberry recipes I have… hehe… Sharing with you some of the blueberry recipes already on the blog… Blueberry Smoothie Easy Blueberry Muffins Chocolate Blueberry Pudding Blueberry Cheesecake Popsicles Blueberry Chia Overnight Oats Blueberry Lassi   This decadent, buttery loaf is adapted from here. I first baked this to carry it to my umma’s cousins house when we were invited for lunch. She totally loved the bake and was all praises about it. I then baked this once for her to carry it for my folks back home and also made half the recipe for a small cake for ourselves. The tangy blueberry bites in between the butter loaf is the highlight of this simple loaf. This is…
