Carla Hall’s Avocado Brownies

ย  Time for the second round of the Blogging Marathon #78! While I was scouring through the themes, I was a little confused on which one to select. Finally I ended up selecting the theme “Let Them Eat Brownies”! While I had gone through the heart attack of having to make three cheesecakes in two weeks last time, this time I thoroughly checked my drafts, ensured I had at least two drafts of brownies so that I had minimum baking. ย  This is the first dish I cooked up for the Blogging Marathon #78 for the theme “Oceanic Cuisine” but got chosen to become the third post! Hehe… ย  I have been wanting to make Lamingtons since very long. The buttery cake surrounded by chocolate icing and rolled in desiccated coconut is definitely a treat for sweet lovers. I have never seen these pretty things being sold here anywhere – maybe I haven’t looked too far! – but going through many recipes and pictures were tempting enough to make me want to try them. Vegan Banana Chia Biscoff Muffins

ย  I don’t know if I really love Biscoff. If you ask me, I would say a “no”. But I don’t hate it, I just like it. ๐Ÿ˜€ Even though I love sweets, I find Biscoff and its Lotus biscuits overwhelmingly sweet. ย  Today happens to be my elder one Rasha’s tenth birthday. Double digits… It is giving me goosebumps already. She has been excited since the beginning of the year, saying that she is going to be a teenager, but I corrected her saying she will not be one till the number changes to reflect the teen. She gave me a stare and accepted the fact that she has to wait a day shy of three years to get to that number.ย I thought as the girls grow up, it will get easier for me, however, that is not what is happening. As days pass by, I find them to be more demanding on me physically and emotionally. It makes me realize what I had thought till now was wrong. Mini Chocolate Mousse Cheesecake

ย  For those who asked me what I baked on our wedding anniversary, this is the answer. With the Blogging Marathon #76 being themed “I love, you love Cheesecakes!”, I had to make sure I did a cheesecake for our anniversary. ๐Ÿ˜‰ And this was what I made. My original plan flopped so bad that I didn’t want to look at it for the whole day. We were left on our anniversary with no dessert/ cake. ๐Ÿ™ Since HD isn’t a sweet tooth, I had no issues with not having any. Vegan Biscoff Cheesecake

ย  After the Gulab Jamun cheesecake shots, here comes the second cheesecake in the Blogging Marathon #76 under the theme, “I love, you love Cheesecakes!”. ย  And it has to be vegan! ๐Ÿ˜‰ I have been wanting to try a vegan cheesecake since very long but somehow I never liked the idea. Maybe it is just the mental thought. I have been seeing this recipeย and the amount of cashews that go into them, somehow doesn’t appeal to me. Once I confirmed to her, and got to planning how I go about cooking the dishes, a rude shock awaited me. ย  Weekends come with a sigh of relief. The long weekend actually made me slightly under the weather. My throat is sore and most of the time my eyes are puffed up thanks to allergic reactions. I don’t like the way I am feeling even though it has subsided quite a bit with the medication. Semolina Mango Cake

ย  I hope you enjoyed the Mango Custard Verrines and Aamras posts in this month’s 3-back-to-back mango recipes. I have been wanting to bake with semolina since long but never got around it. My first attempt at making the basbousa, which is an Arab style semolina cake soaked in sugar syrup, was a dud, and I never got to making it again. Even though I have bookmarked several recipes that use up semolina, I have still kept it pending. There is so much that I am cooking and trying so some things do go off to the end of the list. ๐Ÿ™‚ ย  I made this cake to finish off a can of mango pulp that I had got at a deal. Apple Dates Muffins

ย  Schools just opened for the girls on Monday and that marks the start to another strenuous academic year. As the girls move up grade after grade, it comes with a sense of pride marked with a tinge of sadness… that very soon, our children will cease to be kids and be grown ups in their own right. Rasha will be soon entering her dual numeric age and she is so excited about it! She keeps telling me that she is going to become a teenager and while that statement does give me a mini heart attack, I remind her that teenage sets in only once the numeric age name ends with teen, so she still has another three more years to go. ๐Ÿ˜‰ That did upset her a bit, but gave me a little relief too. ย  As they grow up, it does get a little difficult to handle…

Chocolate Beetroot Brownies

ย  While almost all Indian schools started yesterday, I had some respite of not having to send the girls to school for a week more. I am feeling really relieved of having got an extended holiday from having to wake up really early on a weekday and bang my head over what to pack in their boxes. ๐Ÿ˜€ Five days isn’t much of a long time, but still… any small break is definitely welcome, since this is going to be the case for the next three months, InShaAllah… ย  And talking about the weather, we are back to getting hot. The rains have stopped and the winters have moved on. The mornings and evenings are still good, though a little humid, but the afternoons are getting a bit unbearable. ย  It is already the last Saturday of the month! Wow!
