Hummingbird Bakery Blueberry Muffins

It is already the last Saturday of the month! Wow! I thought doing once a month would be a cake walk, but coming to see, the one month itself passes off in a jiffy! 😀 You can see the previous book reviews here.   Most of the book adorning my shelf seems to be baking book, and that too with a majority of sweet bakes. I don’t know if it is a matter of pride or shame. Hehe… Today, I chose to review this little book that I have in my collection. Everybody must be familiar with Hummingbird Bakery, which is like a must-go for cake treats in London and how famous their bakes are known to me. I have gone to their outlet in Mall of the Emirates sometime back with the kids. While the kids enjoyed their cupcakes, I gorged down on their pistachio loaf along with…

Marbled Classic Banana Bread

From the beginning of this year, life has been hectic. With parents around, the kids act weird. That’s how all grandchildren are supposed to be with grandparents around, right? I sometimes feel like a screaming zombie, who keeps making noise for nobody to listen. It is an absolutely frustrating feeling. 😕 But there is nothing much we can do. My parents leave in another two weeks and already we are feeling a tinge of sadness due to this. The girls are already eating our head to send them off for their summer vacation on their own. Being working doesn’t help since I have hardly a month off on my hand and their vacation is nothing less than two months, which is a lot of time. Each vacation, they complain of getting bored and how their friends are spending the whole vacation back home. I am fine with the idea…

Chocolate Hot Fudge Pudding Cake

Ever since this year has started, there has been an awful level of lethargy associated with the blog. I am not sure why is that so. I have heard many bloggers tell me that after a particular stage, we all face a lack of interest in the proceedings – whether small or large. I am just looking at a small example. I still have the 2014 recipes to be properly done into recipe cards. There are more than 200 posts, and I am not having any motivation to do it. I try to recall how I did it for the other posts, but I am not able to get the hang of it. Then I tell myself, no, I am not going to stress myself over it. 🙂   Just taking back from completing four years of blogging, today’s post happens to be the post #1000 on “The BST”….

Coffee Walnut Cake with Mocha Cream and Candied Walnuts

I don’t whether whoever said children are like angels were in his or her right frame of mind when he or she said that. 😀 I really don’t know… 😉 The little munchkin is no longer little. Azza completes 6 years of life on earth and steps into her seventh year. Alhamdulillah, I am blessed with two that drive me up the wall as much as that can love me to bits. It would be too cliched if I use words like “I can’t believe that it’s been 6 years since you came down into my hands!” 😀 All parents go through similar set of feelings… I am sure of that… She may a little imp at home but Alhamdulillah, she is very well behaved when she is in school and otherwise.   I only pray like every mother would for their child, that He blesses her with the…

Wholewheat Date Cocoa Muffins

Time of the month for posting the challenge for the Muslim Food Bloggers! Last month, if you remember, we had started a new challenge among a small group of bloggers, and my first post was the Ma’amoul that I tried from the blog that was assigned for that month. This month, the challenge was to cook with a particular ingredient and the ingredient that was provided to our team of bloggers was “DATES”.   We all know how important dates is to a Muslim. There are so many mention of this humble fruit in the Qur’an and Hadith, so much that dates are considered one of the fruits of paradise. Dates are the best substance to open your fast with. Dates was what, when our revered Maryam (AS) suffered from birth pangs while carrying Isa (AS), she was offered to ease her pain. “Shake the trunk of the palm toward…

Blueberry Loaf Cake

Blueberries are like my new found love. I have been buying them, eating them and adding them into everything and anything possible. So much as that my drafts even reflect how many blueberry recipes I have… hehe… Sharing with you some of the blueberry recipes already on the blog… Blueberry Smoothie Easy Blueberry Muffins Chocolate Blueberry Pudding Blueberry Cheesecake Popsicles Blueberry Chia Overnight Oats Blueberry Lassi   This decadent, buttery loaf is adapted from here. I first baked this to carry it to my umma’s cousins house when we were invited for lunch. She totally loved the bake and was all praises about it. I then baked this once for her to carry it for my folks back home and also made half the recipe for a small cake for ourselves. The tangy blueberry bites in between the butter loaf is the highlight of this simple loaf. This is…

Eggless Dulche De Leche Banana Bread

A delicious banana bread, with a twist of Dulche De Leche, and studded with pecan, for a light breakfast or a snack for afternoon tea   I have gone a bit low on banana bakes, since the kids are not very fond of it, unless it is the chocolate banana bread. 😕 Personally, I feel that the aroma of banana bakes is intoxicating, especially when it is combined with some cinnamon. It makes me want to sit down in the kitchen without doing anything, only enjoying that mesmerizing smell that comes out of the oven. How many of you feel that? I have never experienced such a head-hitting aroma for any other bakes I do. Maybe I am a bit mental about it. Since I love cakes with bananas, I may be imagining the smell as such, who knows? 😀     I baked these when I had a little…

Cheesecake in a Jar ~ Microwave Cheesecake

Did the title intrigue you? Yes, today I am going to share how to make a baked cheesecake in a microwave! Isn’t that interesting? A cheesecake is something that I avoid making just because I am scared of the calories that come with it. Not that I am really bothered as such, but still… There is something addictive in a cheesecake, that you feel like having more and more of it. So when I saw this cheesecake in a little book called “Mug Cakes”, I had to try it. And boy, wasn’t I happy? This tastes as good as any baked cheesecake! The only thing you have to be careful is about the microwave time – do NOT microwave it at one stretch, instead you do it in batches, so that you have your microwave in one piece! Since it has egg in it, it can built up a…

Coffee Walnut Mug Cake

Coffee is a close second when it come to baking, after chocolate. I love anything with coffee in it. If it has both, then nothing like it! 😉 Coming to our second recipe in the 3 back-to-back microwave treats after the bread pudding, here is a delicious coffee mug cake studded with the crunchiness of walnuts. This is apt for a lazy breakfast, or a quick treat that you do not want to share. I have this problem that when I crave, I make my little treat and try to eat it as quickly as possible, only to see one of the kids coming into the kitchen at that time, when my mouth is fully stuffed. Azza somehow doesn’t bother since she is not much of a foodie, she takes what she wants and moves out. But Rasha will be all inquisitive, “Ummi, are you eating something?” “Why is…

Orange Honey Bread

I have a lot of cookbooks. I don’t know if it is a big collection, but yes, from my perspective, it is quite a lot. I keep adjusting space to accommodate them in the little book shelf that HD got done to keep mine as well as the kids’ books, but with the way it is going, I may have to ask him to make another one for the kids. 😛 As of now, I have literally put a stop on my buying. In the past three months, I have bought only one cookbook, which is an achievement, taking into account how impulsive I am. 😀 The Sharjah Book Fair is coming up next month and I am chanting to myself – “no more cook books”!!! Hehe…   That was when I thought, why not I do cookbook reviews? I have enough of them to do for a few…

Date Cashewnut Brownies

Like many, baking is therapeutic to me, but only if it would not make me feel so off with my weight! 😀 I have been on quite a low off late, especially since I have come back from vacation. I have been really struggling to get back into schedule. Either time is moving too fast or I have become slow – it is one of them. Thanks to this “lack” of time, the first thing that got docked off my list was baking. Not because I don’t enjoy it, I love the feeling of baking a lot and I miss doing it. But at times,  I struggle at home to finish my bakes. Most of the time, it is me who is finishing it. If it is chocolate, Rasha is fine but otherwise she won’t touch it. Azza is really unpredictable – most of the time she acts as…

Pear Almond Cake

Have you ever tried baking with pears? If not, then you must! Very soon… 🙂 My first attempt was this delicious crisp, but somehow I never went beyond it until this recipe occurred. The recipe appeared in one of the Friday magazines. I have this feeling – that if a recipe catches my fancy, then I think about it every time – in my walk, in my talk, even in between my sleeping! This continues till I finally decide to bake it, irrespective of how long it takes for me to do so! This recipe tormented me for so long till I finally bought some pears only for making this cake. The kids and I love the soft pear, which literally melt in the mouth. If we buy the hard pears, it languishes in the fridge. But umma and mattamma (my grandmother) loves them, so whenever they get their…

Carrot Pistachios Mini Cakes

My last two posts were typed and scheduled in advance. I was somehow sure that the long weekend would leave a hangover on me and I wouldn’t want to do live posts. So the hyper blogger is me just typed it out and placed it on schedule. 😉 I wouldn’t say we had a fantastic Eid. We were mostly at home. The day of Eid was loaded with cooking, since HD decided to call in some impromptu guests and I was caught off guard. With just a couple of hours and a little more to finish the whole process, it was indeed a struggle but thankfully HD was of good help too. A big pot of Thalassery Mutton Biriyani, along with a roast chicken, and the normal sides – raita, chammanthi, onion soaked in vinegar and store bought pickle, since my trial of Kadumaanga (a Malabar raw mango pickle)…

Vegan Wheatgerm Brookies

I have this bad habit of picking up stuff I may or may not use and then panic about what to do to finish them off! 😀 I call it the con of going grocery shopping alone. If HD would come along, I wouldn’t pick up anything extra, forget about unknown products. I am glad to have discovered milled flax and chia among a few of them, and the next finding was wheat germ. What is wheat germ? It is said to be the sprouted part of a wheat kernel, that gets separated in the milling process. It is in fact the most healthy part of the wheat, loaded with vitamins, proteins and minerals, but unfortunately gets left out during the making of wheat flour. The proportion of wheat germ is only 2.5% of a kernel of wheat, so it is a very miniscule portion. To read the health…

French Yogurt Cake ~ Gâteau au Yaourt

If I tell you this is the easiest cake I have baked, would you agree? I guess you have to try it to agree to me on this! 🙂   The French Yogurt Cake is the first basic cake that is taught in a French household. It is said that this cake is made by using a 125 ml can of yogurt and everything is measured in it, ie. 1 measure of yogurt, 3 measures of flour, 2 measures of sugar and 1 measure of oil, thereby making it easy to remember the proportions. Even though I got the idea of this cake from David Lebovitz’s book “The Sweet Life in Paris“, I referred to a lot of posts on Google, especially on this one and totally loved how homely this bake is.  Especially when you have guests coming in unannounced or if you want a no-nonsense simple tea…
