Semolina Mango Cake

  I hope you enjoyed the Mango Custard Verrines and Aamras posts in this month’s 3-back-to-back mango recipes. I have been wanting to bake with semolina since long but never got around it. My first attempt at making the basbousa, which is an Arab style semolina cake soaked in sugar syrup, was a dud, and I never got to making it again. Even though I have bookmarked several recipes that use up semolina, I have still kept it pending. There is so much that I am cooking and trying so some things do go off to the end of the list. 🙂   I made this cake to finish off a can of mango pulp that I had got at a deal. My mind went loitering at all options like ice cream and pudding but then I remembered the semolina mango cake recipe I had saved up very long ago….

Apple Dates Muffins

  Schools just opened for the girls on Monday and that marks the start to another strenuous academic year. As the girls move up grade after grade, it comes with a sense of pride marked with a tinge of sadness… that very soon, our children will cease to be kids and be grown ups in their own right. Rasha will be soon entering her dual numeric age and she is so excited about it! She keeps telling me that she is going to become a teenager and while that statement does give me a mini heart attack, I remind her that teenage sets in only once the numeric age name ends with teen, so she still has another three more years to go. 😉 That did upset her a bit, but gave me a little relief too.   As they grow up, it does get a little difficult to handle…

Baked Blueberry French Toast

  We have had some amazing weather over the last weekend. Scheduling posts actually keeps me away from updating the blog with what happens, but sometimes you are forced to, especially when the posts are related to challenges and you don’t want to miss the dates. 🙂 I like to be particular that way, and Alhamdulillah, so far I have been doing well to manage. If you are following me on Instagram, you would have caught up with the weekend weather updates. I tend to post more weather/sky/nature clicks there rather than my food. 😀 Somehow, I prefer to click my surroundings rather than what I am eating, especially when we are at a restaurant. Hummingbird Bakery Blueberry Muffins

  It is already the last Saturday of the month! Wow! Marbled Classic Banana Bread

  From the beginning of this year, life has been hectic. With parents around, the kids act weird. That’s how all grandchildren are supposed to be with grandparents around, right? I sometimes feel like a screaming zombie, who keeps making noise for nobody to listen. It is an absolutely frustrating feeling. 😕 But there is nothing much we can do. My parents leave in another two weeks and already we are feeling a tinge of sadness due to this. The girls are already eating our head to send them off for their summer vacation on their own. Being working doesn’t help since I have hardly a month off on my hand and their vacation is nothing less than two months, which is a lot of time.   Blueberries are like my new found love. I have been buying them, eating them and adding them into everything and anything possible. Apple Hand Pies/ Turnovers

  There are these apple pies you get at McDonald’s. I am not fond of their burgers, but the kids want to go there all the time for the kid’s meal, not for the nuggets but for the toy that comes with it. It is really frustrating, to say the least. Anytime we go to a mall, the kids scream for McD. I always say a “no” or put a timeline when they can have it again, but the HD always gives in to their requirements. Eggless Dulche De Leche Banana Bread

A delicious banana bread, with a twist of Dulche De Leche, and studded with pecan, for a light breakfast or a snack for afternoon tea   I have gone a bit low on banana bakes, since the kids are not very fond of it, unless it is the chocolate banana bread. 😕 Personally, I feel that the aroma of banana bakes is intoxicating, especially when it is combined with some cinnamon. It makes me want to sit down in the kitchen without doing anything, only enjoying that mesmerizing smell that comes out of the oven. How many of you feel that? Wholewheat Apricot Loaf

  Of late, I have been literally shaking my drafts. Some pictures that I feel are not meeting my minimum requirements are getting deleted and pushed to the “to make again for the blog” category. Already Fami gave me a little piece of her mind for the “lousy” pictures in the Lauki Chana Dal, saying that the dish deserves a much better picture. 😀 I agree with her, but my problem is I will continue to cook it at night and I may not be able to click it in day light. I have heard many food bloggers say that they keep some quantity to click in day light, but that is definitely not the thing for me considering I am working. Orange Honey Bread

  I have a lot of cookbooks. I don’t know if it is a big collection, but yes, from my perspective, it is quite a lot. I keep adjusting space to accommodate them in the little book shelf that HD got done to keep mine as well as the kids’ books, but with the way it is going, I may have to ask him to make another one for the kids. 😛 As of now, I have literally put a stop on my buying. In the past three months, I have bought only one cookbook, which is an achievement, taking into account how impulsive I am. 😀 The Sharjah Book Fair is coming up next month and I am chanting to myself – “no more cook books”!!! Date Cashewnut Brownies

  Like many, baking is therapeutic to me, but only if it would not make me feel so off with my weight! 😀 I have been on quite a low off late, especially since I have come back from vacation. I have been really struggling to get back into schedule. Either time is moving too fast or I have become slow – it is one of them. Thanks to this “lack” of time, the first thing that got docked off my list was baking. Not because I don’t enjoy it, I love the feeling of baking a lot and I miss doing it. Pear Almond Cake

  Have you ever tried baking with pears? If not, then you must! Very soon… 🙂 My first attempt was this delicious crisp, but somehow I never went beyond it until this recipe occurred. The recipe appeared in one of the Friday magazines. I have this feeling – that if a recipe catches my fancy, then I think about it every time – in my walk, in my talk, even in between my sleeping! Strawberry Almond Galette

  Let me start off by sharing what I read first thing in the morning today… 🙂   Sometimes you dream a lot and then finally gather up your courage to make it! Hehe… That is the story of making a galette… Galette is nothing but a free form tart. The base is the same as a tart, the fillings are put in the center and then just folded in, and then baked till done. There is no blind baking and double baking like you do for a tart, just straight and simple…     I am thankful to Him for making me stay in a country that has supermarkets blessed with strawberries abundantly. Thanks to my Azza’s obsession with pink, strawberries always make it to my shopping cart if it is on special offer. Most of the time we eat it up and sometimes it gets spoiled too. 🙁…
