Carla Hall’s Avocado Brownies

Time for the second round of the Blogging Marathon #78! While I was scouring through the themes, I was a little confused on which one to select. Finally I ended up selecting the theme “Let Them Eat Brownies”! While I had gone through the heart attack of having to make three cheesecakes in two weeks last time, this time I thoroughly checked my drafts, ensured I had at least two drafts of brownies so that I had minimum baking. To my excitement, I had three to cover just enough for the marathon! That is one advantage of having too much in the drafts, I suppose! 😀     The first brownie I choose to share with you are these delicious avocado brownies. These were my first trial of brownies with avocados, even though the only one that appeared on the blog was the vegan version. I had initially made…

Vegan Banana Chia Biscoff Muffins

I don’t know if I really love Biscoff. If you ask me, I would say a “no”. But I don’t hate it, I just like it. 😀 Even though I love sweets, I find Biscoff and its Lotus biscuits overwhelmingly sweet. I can’t go beyond one little spoon of Biscoff or two little biscuits at the same time. But I can vouch for one thing – that both these ingredients make amazing desserts! If you love Biscoff, then here are a few recipes on the blog that you could try: Cookie Batter Granola Biscoff Almond Milk Pops Biscoff White Hot Chocolate Vegan Biscoff Cheesecake   I am now going to add one more to the list… 😉 These vegan banana muffins are spiked with Biscoff with an added crunch and goodness of chia seeds. Just like all the banana bakes I have made and cherished, I ended up eating…

Eggless Apricot White Chocolate Scones

Eid just came and went. I am tired to the bones, I must say but in a good way. The lack of sleep is getting onto me, but Alhamdulillah, no complaints. On Saturday night, as soon as Eid was declared, I got to making chicken cutlets for our Eid breakfast at my aunt’s place, where my cousins did the Ela Ada. It was a bit of a pandemonium, since the mix I made for the cutlets were too little. Fortunately, I was able to whip up an extra small batch to make a decent amount of cutlets that everybody could enjoy. I also got to making some awesome cinnamon rolls for my cousins, which were totally wiped out. I will be making them again for the blog, since surprisingly HD seemed to enjoy them! After our prayers at the Eidgah and breakfast at aunt’s place, I quickly got to…

Vegan Banana Bread with Chocolate Chips and Walnut

The days of Ramadan are passing by fast. As this post goes for publishing, it is already the second ten days of this holy month. During the last week, I was listening to a Malayalam lecture and the main topic was of three virtues that Allah has not mentioned how much is the reward – Sabr (patience), Afuww (forgiving) and Sawm (fasting). For every other good deed we do, there is a number of reward associated with it, however for the above, there is no quantification of reward except that He will reward those who possess these quantities abundantly. That got me thinking. “Indeed, the patient will be given their reward without any account.” (Surah Az-Zumar: part of Verse 10) “And the retribution for an evil act is an evil one like it, but whoever pardons and makes reconciliation – his reward is (due) with Allah. Indeed, He does…

Orange Chocolate Chip Biscotti ~ Guest post for Priya’s Kitchenette

I must say that I can’t sit properly on my chair while typing this post – I am really excited! 😀 Maybe because I am on the space of somebody who has been super sweet and supportive of me for a long period of time… 🙂   Today, I am on Priya’s space. My interaction with Priya started when she went on with the posting-one-recipe-a-day as she started her little space called “Priya’s Kitchenette”. Everybody keeps asking me how I post so frequently, but if you check out my blog, I really can’t do long stretches like she did – posting every single day of a year! Not surprisingly, her hard work was discovered and recognized by the Limca Book of Records. After this year, she concentrated on growing her blog and now she has her own event firm, which makes me feel proud of having a friend like…

Semolina Mango Cake

I hope you enjoyed the Mango Custard Verrines and Aamras posts in this month’s 3-back-to-back mango recipes. I have been wanting to bake with semolina since long but never got around it. My first attempt at making the basbousa, which is an Arab style semolina cake soaked in sugar syrup, was a dud, and I never got to making it again. Even though I have bookmarked several recipes that use up semolina, I have still kept it pending. There is so much that I am cooking and trying so some things do go off to the end of the list. 🙂   I made this cake to finish off a can of mango pulp that I had got at a deal. My mind went loitering at all options like ice cream and pudding but then I remembered the semolina mango cake recipe I had saved up very long ago….

Apple Dates Muffins

Schools just opened for the girls on Monday and that marks the start to another strenuous academic year. As the girls move up grade after grade, it comes with a sense of pride marked with a tinge of sadness… that very soon, our children will cease to be kids and be grown ups in their own right. Rasha will be soon entering her dual numeric age and she is so excited about it! She keeps telling me that she is going to become a teenager and while that statement does give me a mini heart attack, I remind her that teenage sets in only once the numeric age name ends with teen, so she still has another three more years to go. 😉 That did upset her a bit, but gave me a little relief too.   As they grow up, it does get a little difficult to handle…

Baked Blueberry French Toast

We have had some amazing weather over the last weekend. Scheduling posts actually keeps me away from updating the blog with what happens, but sometimes you are forced to, especially when the posts are related to challenges and you don’t want to miss the dates. 🙂 I like to be particular that way, and Alhamdulillah, so far I have been doing well to manage. If you are following me on Instagram, you would have caught up with the weekend weather updates. I tend to post more weather/sky/nature clicks there rather than my food. 😀 Somehow, I prefer to click my surroundings rather than what I am eating, especially when we are at a restaurant. I prefer to dig in right away rather than pull out the mobile, click it till the perfect click is done, and then eat it cold. I can’t take it that way… 😛 The rains…

Hummingbird Bakery Blueberry Muffins

It is already the last Saturday of the month! Wow! I thought doing once a month would be a cake walk, but coming to see, the one month itself passes off in a jiffy! 😀 You can see the previous book reviews here.   Most of the book adorning my shelf seems to be baking book, and that too with a majority of sweet bakes. I don’t know if it is a matter of pride or shame. Hehe… Today, I chose to review this little book that I have in my collection. Everybody must be familiar with Hummingbird Bakery, which is like a must-go for cake treats in London and how famous their bakes are known to me. I have gone to their outlet in Mall of the Emirates sometime back with the kids. While the kids enjoyed their cupcakes, I gorged down on their pistachio loaf along with…

Marbled Classic Banana Bread

From the beginning of this year, life has been hectic. With parents around, the kids act weird. That’s how all grandchildren are supposed to be with grandparents around, right? I sometimes feel like a screaming zombie, who keeps making noise for nobody to listen. It is an absolutely frustrating feeling. 😕 But there is nothing much we can do. My parents leave in another two weeks and already we are feeling a tinge of sadness due to this. The girls are already eating our head to send them off for their summer vacation on their own. Being working doesn’t help since I have hardly a month off on my hand and their vacation is nothing less than two months, which is a lot of time. Each vacation, they complain of getting bored and how their friends are spending the whole vacation back home. I am fine with the idea…

Wholewheat Date Cocoa Muffins

Time of the month for posting the challenge for the Muslim Food Bloggers! Last month, if you remember, we had started a new challenge among a small group of bloggers, and my first post was the Ma’amoul that I tried from the blog that was assigned for that month. This month, the challenge was to cook with a particular ingredient and the ingredient that was provided to our team of bloggers was “DATES”.   We all know how important dates is to a Muslim. There are so many mention of this humble fruit in the Qur’an and Hadith, so much that dates are considered one of the fruits of paradise. Dates are the best substance to open your fast with. Dates was what, when our revered Maryam (AS) suffered from birth pangs while carrying Isa (AS), she was offered to ease her pain. “Shake the trunk of the palm toward…

Blueberry Loaf Cake

Blueberries are like my new found love. I have been buying them, eating them and adding them into everything and anything possible. So much as that my drafts even reflect how many blueberry recipes I have… hehe… Sharing with you some of the blueberry recipes already on the blog… Blueberry Smoothie Easy Blueberry Muffins Chocolate Blueberry Pudding Blueberry Cheesecake Popsicles Blueberry Chia Overnight Oats Blueberry Lassi   This decadent, buttery loaf is adapted from here. I first baked this to carry it to my umma’s cousins house when we were invited for lunch. She totally loved the bake and was all praises about it. I then baked this once for her to carry it for my folks back home and also made half the recipe for a small cake for ourselves. The tangy blueberry bites in between the butter loaf is the highlight of this simple loaf. This is…
