Hummingbird Bakery Blueberry Muffins

It is already the last Saturday of the month! Wow! I thought doing once a month would be a cake walk, but coming to see, the one month itself passes off in a jiffy! 😀 You can see the previous book reviews here.   Most of the book adorning my shelf seems to be baking book, and that too with a majority of sweet bakes. I don’t know if it is a matter of pride or shame. Hehe… Today, I chose to review this little book that I have in my collection. Everybody must be familiar with Hummingbird Bakery, which is like a must-go for cake treats in London and how famous their bakes are known to me. I have gone to their outlet in Mall of the Emirates sometime back with the kids. While the kids enjoyed their cupcakes, I gorged down on their pistachio loaf along with…

Marbled Classic Banana Bread

From the beginning of this year, life has been hectic. With parents around, the kids act weird. That’s how all grandchildren are supposed to be with grandparents around, right? I sometimes feel like a screaming zombie, who keeps making noise for nobody to listen. It is an absolutely frustrating feeling. 😕 But there is nothing much we can do. My parents leave in another two weeks and already we are feeling a tinge of sadness due to this. The girls are already eating our head to send them off for their summer vacation on their own. Being working doesn’t help since I have hardly a month off on my hand and their vacation is nothing less than two months, which is a lot of time. Each vacation, they complain of getting bored and how their friends are spending the whole vacation back home. I am fine with the idea…

Wholewheat Date Cocoa Muffins

Time of the month for posting the challenge for the Muslim Food Bloggers! Last month, if you remember, we had started a new challenge among a small group of bloggers, and my first post was the Ma’amoul that I tried from the blog that was assigned for that month. This month, the challenge was to cook with a particular ingredient and the ingredient that was provided to our team of bloggers was “DATES”.   We all know how important dates is to a Muslim. There are so many mention of this humble fruit in the Qur’an and Hadith, so much that dates are considered one of the fruits of paradise. Dates are the best substance to open your fast with. Dates was what, when our revered Maryam (AS) suffered from birth pangs while carrying Isa (AS), she was offered to ease her pain. “Shake the trunk of the palm toward…

Blueberry Loaf Cake

Blueberries are like my new found love. I have been buying them, eating them and adding them into everything and anything possible. So much as that my drafts even reflect how many blueberry recipes I have… hehe… Sharing with you some of the blueberry recipes already on the blog… Blueberry Smoothie Easy Blueberry Muffins Chocolate Blueberry Pudding Blueberry Cheesecake Popsicles Blueberry Chia Overnight Oats Blueberry Lassi   This decadent, buttery loaf is adapted from here. I first baked this to carry it to my umma’s cousins house when we were invited for lunch. She totally loved the bake and was all praises about it. I then baked this once for her to carry it for my folks back home and also made half the recipe for a small cake for ourselves. The tangy blueberry bites in between the butter loaf is the highlight of this simple loaf. This is…

Apple Hand Pies/ Turnovers

There are these apple pies you get at McDonald’s. I am not fond of their burgers, but the kids want to go there all the time for the kid’s meal, not for the nuggets but for the toy that comes with it. It is really frustrating, to say the least. Anytime we go to a mall, the kids scream for McD. I always say a “no” or put a timeline when they can have it again, but the HD always gives in to their requirements. So now, I try to not get any close to their outlet. 😀   OK, coming back to the apple pie, if there is something I love of their’s, then it is the pie. Crunchy puff pastry filled with hot cinnamony apple… so much deliciousness! I recently learned that “hand pies” are also called “turnovers”, but Google also tells me that that turnovers are…

Eggless Dulche De Leche Banana Bread

A delicious banana bread, with a twist of Dulche De Leche, and studded with pecan, for a light breakfast or a snack for afternoon tea   I have gone a bit low on banana bakes, since the kids are not very fond of it, unless it is the chocolate banana bread. 😕 Personally, I feel that the aroma of banana bakes is intoxicating, especially when it is combined with some cinnamon. It makes me want to sit down in the kitchen without doing anything, only enjoying that mesmerizing smell that comes out of the oven. How many of you feel that? I have never experienced such a head-hitting aroma for any other bakes I do. Maybe I am a bit mental about it. Since I love cakes with bananas, I may be imagining the smell as such, who knows? 😀     I baked these when I had a little…

Wholewheat Apricot Loaf

Of late, I have been literally shaking my drafts. Some pictures that I feel are not meeting my minimum requirements are getting deleted and pushed to the “to make again for the blog” category. Already Fami gave me a little piece of her mind for the “lousy” pictures in the Lauki Chana Dal, saying that the dish deserves a much better picture. 😀 I agree with her, but my problem is I will continue to cook it at night and I may not be able to click it in day light. I have heard many food bloggers say that they keep some quantity to click in day light, but that is definitely not the thing for me considering I am working. My day light disappears by the time I am back home. 🙂 So you will still see night pictures, but hopefully better looking pictures – hopefully, is the…

Orange Honey Bread

I have a lot of cookbooks. I don’t know if it is a big collection, but yes, from my perspective, it is quite a lot. I keep adjusting space to accommodate them in the little book shelf that HD got done to keep mine as well as the kids’ books, but with the way it is going, I may have to ask him to make another one for the kids. 😛 As of now, I have literally put a stop on my buying. In the past three months, I have bought only one cookbook, which is an achievement, taking into account how impulsive I am. 😀 The Sharjah Book Fair is coming up next month and I am chanting to myself – “no more cook books”!!! Hehe…   That was when I thought, why not I do cookbook reviews? I have enough of them to do for a few…

Date Cashewnut Brownies

Like many, baking is therapeutic to me, but only if it would not make me feel so off with my weight! 😀 I have been on quite a low off late, especially since I have come back from vacation. I have been really struggling to get back into schedule. Either time is moving too fast or I have become slow – it is one of them. Thanks to this “lack” of time, the first thing that got docked off my list was baking. Not because I don’t enjoy it, I love the feeling of baking a lot and I miss doing it. But at times,  I struggle at home to finish my bakes. Most of the time, it is me who is finishing it. If it is chocolate, Rasha is fine but otherwise she won’t touch it. Azza is really unpredictable – most of the time she acts as…

Pear Almond Cake

Have you ever tried baking with pears? If not, then you must! Very soon… 🙂 My first attempt was this delicious crisp, but somehow I never went beyond it until this recipe occurred. The recipe appeared in one of the Friday magazines. I have this feeling – that if a recipe catches my fancy, then I think about it every time – in my walk, in my talk, even in between my sleeping! This continues till I finally decide to bake it, irrespective of how long it takes for me to do so! This recipe tormented me for so long till I finally bought some pears only for making this cake. The kids and I love the soft pear, which literally melt in the mouth. If we buy the hard pears, it languishes in the fridge. But umma and mattamma (my grandmother) loves them, so whenever they get their…

Strawberry Almond Galette

Let me start off by sharing what I read first thing in the morning today… 🙂   Sometimes you dream a lot and then finally gather up your courage to make it! Hehe… That is the story of making a galette… Galette is nothing but a free form tart. The base is the same as a tart, the fillings are put in the center and then just folded in, and then baked till done. There is no blind baking and double baking like you do for a tart, just straight and simple…     I am thankful to Him for making me stay in a country that has supermarkets blessed with strawberries abundantly. Thanks to my Azza’s obsession with pink, strawberries always make it to my shopping cart if it is on special offer. Most of the time we eat it up and sometimes it gets spoiled too. 🙁…

Banana Date Crumble {No Sugar!} ~ Ramadan Guest Post for Muslimah Bloggers

I am very excited, Alhamdulillah to be on the Muslimah Bloggers as a part of the month long Ramadan series, where you will find Muslimah bloggers from all over the world, chipping in with their views and their insights about this holy month. It makes me feel honored to be posting on this lovely platform that unites a niche yet strong base of bloggers, dabbling with a variety of subjects in a Halaal way. May Allah make your endeavor successful and everlasting, in this world and the Aakhirah… Aameen…   They had invited guest posts for this month and I quickly volunteered to post for the second of the month, which is today, Alhamdulillah. While trying to figure out what to give, my eyes fell on this “too-easy-to-believe” sort of a dessert. A healthy crumble, with two of my favorite fruits, and what more – no added sugar! To…

Joan’s Rainbow Cake ~ Almost 100% Vegan!

I actually wanted to wait to post this recipe, but then I thought, it is fine, I don’t need to wait! 😉 The third in the series of the 3 back-to-back vegan cake is this cake that I baked for our anniversary last month, Alhamdulillah… 🙂 I was actually not planning to bake anything. I was down with fever and body pain, it was a very normal dull day and unlike other anniversaries, where I would be up planning so much – you can refer to my previous anniversary cakes here, here and here –  this time, I had no plans at all! But as the day passed by, I became restless and I pushed myself into the kitchen to bake this cake.   The Joan’s Rainbow Cake has been on my to-do list, and I am so glad that I managed to veganize the whole recipe and make…

Vegan Strawberry Cake

As soon as I had made these vegan brownies, I saw Azza sulking on one side. When I inquired what was her issue, she told me, “Ummi, you always make chocolate that thaatha likes, you never make what I want!” I was a bit taken aback by it. I always thought she loved chocolate but then it turned out my assumption was wrong! Then she asked me for a strawberry cake. That is when I remembered her fetish for pink, and that was one reason why I baked her a pink cake for her birthday last year, and this time got her a pink doll cake. She loves pink to the core. “Barbie is pink so everything has to be pink” is her philosophy. Initially, I used to love pink too but now seeing too many pinks, my eyes have turned soar! 😉     I wanted to bake…
