Ultimate Vegan Brownies

After the Avocado Brownies and the Cream Cheese Brownies, here comes the third brownie under the theme “Let Them Eat Brownies” in the Blogging Marathon #78. I had to choose to share a vegan brownie, since this is one area that I am loving to bake. Baking a cake or a brownie without any diary or eggs is a challenge in itself. Making it successful is very tricky too. You can browse through the vegan bakes on the blog here.   While craving for brownies, I landed up on this link which called it the “ultimate” vegan brownie. The title itself was so tempting for me to get moving on with it. The vegan avocado brownie on the blog had a really fudge like texture, which was missing in this brownie, but would tick all the right buttons for sweet tooths who like more cake like brownies, just like…

Cream Cheese Brownies

After those delicious avocado brownies, let’s come to another sinful one as a part of the “Let them Eat Brownies” theme for the Blogging Marathon #78. Is there anything less sinful than brownies? I mean, you make them in any way and they will eventually end up being really addictive, that you feel sad to be sharing them. 😉 Most of the brownies that I have shared on the blog have all been baked and shared, not because I am generous, but because I didn’t want more fat to accumulate all over myself as much as I have already now! Somehow, I always emphasis that blogging has made me gain a lot of weight off late, but still my mind doesn’t allow me to really blame blogging 100%. There are a lot more factors that made me bake like mad some times. My colleagues actually enjoyed a lot during…

Carla Hall’s Avocado Brownies

Time for the second round of the Blogging Marathon #78! While I was scouring through the themes, I was a little confused on which one to select. Finally I ended up selecting the theme “Let Them Eat Brownies”! While I had gone through the heart attack of having to make three cheesecakes in two weeks last time, this time I thoroughly checked my drafts, ensured I had at least two drafts of brownies so that I had minimum baking. To my excitement, I had three to cover just enough for the marathon! That is one advantage of having too much in the drafts, I suppose! 😀     The first brownie I choose to share with you are these delicious avocado brownies. These were my first trial of brownies with avocados, even though the only one that appeared on the blog was the vegan version. I had initially made…

Lamingtons

This is the first dish I cooked up for the Blogging Marathon #78 for the theme “Oceanic Cuisine” but got chosen to become the third post! Hehe…   I have been wanting to make Lamingtons since very long. The buttery cake surrounded by chocolate icing and rolled in desiccated coconut is definitely a treat for sweet lovers. I have never seen these pretty things being sold here anywhere – maybe I haven’t looked too far! – but going through many recipes and pictures were tempting enough to make me want to try them. All I did was wait for an opportunity. Once the theme was declared and I selected it, I had to go ahead and make these, since Australia is an Oceanic country (or continent) and Lamingtons are considered to be a part of its tradition. Would you love to read the history behind this treat? Then read…

Chocolate Honey Granola

The tenth of the month, it is, and time for the Muslim Food Blogger Challenge! This month, the theme chosen was “Cooking with Honey”. We all know what honey is and how, just like coconut oil, it has gone from being super-food to notorious food back to “good food”. Did you know there is a chapter in the Quran called as “An-Nahl” (Chapter 16)?   Your Lord revealed to the bees: “Build dwellings in the mountains and the trees, and also in the structures which men erect. Then eat from every kind of fruit and travel the paths of your Lord, which have been made easy for you to follow.” From inside them comes a drink of varying colours, containing healing for mankind. There is certainly a Sign in that for people who reflect. (Surah An-Nahl:69)   While reading through, I found some very interesting articles about the mention…

Vegan Banana Chia Biscoff Muffins

I don’t know if I really love Biscoff. If you ask me, I would say a “no”. But I don’t hate it, I just like it. 😀 Even though I love sweets, I find Biscoff and its Lotus biscuits overwhelmingly sweet. I can’t go beyond one little spoon of Biscoff or two little biscuits at the same time. But I can vouch for one thing – that both these ingredients make amazing desserts! If you love Biscoff, then here are a few recipes on the blog that you could try: Cookie Batter Granola Biscoff Almond Milk Pops Biscoff White Hot Chocolate Vegan Biscoff Cheesecake   I am now going to add one more to the list… 😉 These vegan banana muffins are spiked with Biscoff with an added crunch and goodness of chia seeds. Just like all the banana bakes I have made and cherished, I ended up eating…

Eggless Apricot White Chocolate Scones

Eid just came and went. I am tired to the bones, I must say but in a good way. The lack of sleep is getting onto me, but Alhamdulillah, no complaints. On Saturday night, as soon as Eid was declared, I got to making chicken cutlets for our Eid breakfast at my aunt’s place, where my cousins did the Ela Ada. It was a bit of a pandemonium, since the mix I made for the cutlets were too little. Fortunately, I was able to whip up an extra small batch to make a decent amount of cutlets that everybody could enjoy. I also got to making some awesome cinnamon rolls for my cousins, which were totally wiped out. I will be making them again for the blog, since surprisingly HD seemed to enjoy them! After our prayers at the Eidgah and breakfast at aunt’s place, I quickly got to…

Vegan Banana Bread with Chocolate Chips and Walnut

The days of Ramadan are passing by fast. As this post goes for publishing, it is already the second ten days of this holy month. During the last week, I was listening to a Malayalam lecture and the main topic was of three virtues that Allah has not mentioned how much is the reward – Sabr (patience), Afuww (forgiving) and Sawm (fasting). For every other good deed we do, there is a number of reward associated with it, however for the above, there is no quantification of reward except that He will reward those who possess these quantities abundantly. That got me thinking. “Indeed, the patient will be given their reward without any account.” (Surah Az-Zumar: part of Verse 10) “And the retribution for an evil act is an evil one like it, but whoever pardons and makes reconciliation – his reward is (due) with Allah. Indeed, He does…

Masala Buns ~ Potato Stuffed Buns

“The month of Ramadhan [is that] in which was revealed the Qur’an, a guidance for the people and clear proofs of guidance and criterion. So whoever sights [the new moon of] the month, let him fast it; and whoever is ill or on a journey – then an equal number of other days. Allah intends for you ease and does not intend for you hardship and [wants] for you to complete the period and to glorify Allah for that [to] which He has guided you; and perhaps you will be grateful.” (Surah Al-Baqarah: 185)   The holy month of Ramadan has descended upon us, Alhamdulillah. How each year, Ramadan comes and goes, without even us realizing is an enigma. 🙁 We are passing through difficult times in all ways, whether it is globally or on personal fronts for many of us. I only pray that He makes this Ramadan…

Orange Chocolate Chip Biscotti ~ Guest post for Priya’s Kitchenette

I must say that I can’t sit properly on my chair while typing this post – I am really excited! 😀 Maybe because I am on the space of somebody who has been super sweet and supportive of me for a long period of time… 🙂   Today, I am on Priya’s space. My interaction with Priya started when she went on with the posting-one-recipe-a-day as she started her little space called “Priya’s Kitchenette”. Everybody keeps asking me how I post so frequently, but if you check out my blog, I really can’t do long stretches like she did – posting every single day of a year! Not surprisingly, her hard work was discovered and recognized by the Limca Book of Records. After this year, she concentrated on growing her blog and now she has her own event firm, which makes me feel proud of having a friend like…

Mini Chocolate Mousse Cheesecake

For those who asked me what I baked on our wedding anniversary, this is the answer. With the Blogging Marathon #76 being themed “I love, you love Cheesecakes!”, I had to make sure I did a cheesecake for our anniversary. 😉 And this was what I made. My original plan flopped so bad that I didn’t want to look at it for the whole day. We were left on our anniversary with no dessert/ cake. 🙁 Since HD isn’t a sweet tooth, I had no issues with not having any. We don’t make it evident to the kids about that it is our anniversary, so they were also not aware of the day. Strange parents, aren’t we? 😉 It was only in the evening when we were out for a drive did the girls realise and Rasha was like, “Ummi, why didn’t you make a cake then?”    …

Chocolate French Yogurt Cake

Weekends come with a sigh of relief. The long weekend actually made me slightly under the weather. My throat is sore and most of the time my eyes are puffed up thanks to allergic reactions. I don’t like the way I am feeling even though it has subsided quite a bit with the medication. I am not sure how much I can rest over the weekend, but sincerely hoping to… Meanwhile, I am looking forward to the next week with a lot of excitement. Some little changes on the personal front is what I am expecting, InShaAllah… As we progress in age, we have to seriously look and take care of ourselves and hopefully this step will be the start to an array of change, InShaAllah… I will keep myself updated on IG so do follow me there! It will be just to keep myself motivated and not get…
