Hummingbird Bakery Blueberry Muffins

ย  It is already the last Saturday of the month! Wow! I thought doing once a month would be a cake walk, but coming to see, the one month itself passes off in a jiffy! ๐Ÿ˜€ You can see the previous book reviews here. ย  Most of the book adorning my shelf seems to be baking book, and that too with a majority of sweet bakes. I don’t know if it is a matter of pride or shame. Hehe… Today, I chose to review this little book that I have in my collection. Everybody must be familiar with Hummingbird Bakery, which is like a must-go for cake treats in London and how famous their bakes are known to me. I have gone to their outlet in Mall of the Emirates sometime back with the kids. While the kids enjoyed their cupcakes, I gorged down on their pistachio loaf along with…

Marbled Classic Banana Bread

ย  From the beginning of this year, life has been hectic. With parents around, the kids act weird. That’s how all grandchildren are supposed to be with grandparents around, right? I sometimes feel like a screaming zombie, who keeps making noise for nobody to listen. It is an absolutely frustrating feeling. ๐Ÿ˜• But there is nothing much we can do. My parents leave in another two weeks and already we are feeling a tinge of sadness due to this. The girls are already eating our head to send them off for their summer vacation on their own. Being working doesn’t help since I have hardly a month off on my hand and their vacation is nothing less than two months, which is a lot of time. Each vacation, they complain of getting bored and how their friends are spending the whole vacation back home. I am fine with the idea…

Wholewheat Date Cocoa Muffins

ย  Time of the month for posting the challenge for the Muslim Food Bloggers! Last month, if you remember, we had started a new challenge among a small group of bloggers, and my first post was the Ma’amoul that I tried from the blog that was assigned for that month. This month, the challenge was to cook with a particular ingredient and the ingredient that was provided to our team of bloggers was “DATES”. ย  We all know how important dates is to a Muslim. There are so many mention of this humble fruit in the Qur’an and Hadith, so much that dates are considered one of the fruits of paradise. Dates are the best substance to open your fast with. Dates was what, when our revered Maryam (AS) suffered from birth pangs while carrying Isa (AS), she was offered to ease her pain.ย โ€œShake the trunk of the palm toward…

Blueberry Loaf Cake

ย  Blueberries are like my new found love. I have been buying them, eating them and adding them into everything and anything possible. So much as that my drafts even reflect how many blueberry recipes I have… hehe… Sharing with you some of the blueberry recipes already on the blog… Blueberry Smoothie Easy Blueberry Muffins Chocolate Blueberry Pudding Blueberry Cheesecake Popsicles Blueberry Chia Overnight Oats Blueberry Lassi ย  This decadent, buttery loaf is adapted from here. I first baked this to carry it to my umma’s cousins house when we were invited for lunch. She totally loved the bake and was all praises about it. I then baked this once for her to carry it for my folks back home and also made half the recipe for a small cake for ourselves. The tangy blueberry bites in between the butter loaf is the highlight of this simple loaf. This is…

Apple Hand Pies/ Turnovers

ย  There are these apple pies you get at McDonald’s. I am not fond of their burgers, but the kids want to go there all the time for the kid’s meal, not for the nuggets but for the toy that comes with it. It is really frustrating, to say the least. Anytime we go to a mall, the kids scream for McD. I always say a “no” or put a timeline when they can have it again, but the HD always gives in to their requirements. So now, I try to not get any close to their outlet. ๐Ÿ˜€ ย  OK, coming back to the apple pie, if there is something I love of their’s, then it is the pie. Crunchy puff pastry filled with hot cinnamony apple… so much deliciousness! I recently learned that “hand pies” are also called “turnovers”, but Google also tells me that that turnovers are…

Eggless Dulche De Leche Banana Bread

A delicious banana bread, with a twist of Dulche De Leche, and studded with pecan, for a light breakfast or a snack for afternoon tea ย  I have gone a bit low on banana bakes, since the kids are not very fond of it, unless it is the chocolate banana bread. ๐Ÿ˜• Personally, I feel that the aroma of banana bakes is intoxicating, especially when it is combined with some cinnamon. It makes me want to sit down in the kitchen without doing anything, only enjoying that mesmerizing smell that comes out of the oven. How many of you feel that? I have never experienced such a head-hitting aroma for any other bakes I do. Maybe I am a bit mental about it. Since I love cakes with bananas, I may be imagining the smell as such, who knows? ๐Ÿ˜€ ย  ย  I baked these when I had a little…

Ma’amoul ~ Middle Eastern Date Filled Cookies

ย  We have a small group of enthusiastic bloggers called the Muslim Food Bloggers. Last month, we decided that we would go ahead and do a challenge every month. We will be doing various challenges over the month to avoid the monotony. I am really excited to be starting this event and hosting the event. Sincerely hoping that we will be able to make the event a regular and long running event, InShaAllah… ๐Ÿ™‚ We will be working on a theme every month, that will be posted on the 10th of every month and will be linked in for everybody to see all the participating posts. This is just a humble beginning. May Allah bless us in this little activity and strengthen our bonding, Aameen… ๐Ÿ™‚ ย  To start with, the first challenge is to try a recipe from the blog of a very famous blogger, who is so well…

Herbed Focaccia

ย  Even though I love baking with yeast – it has been very kind to me and I have hardly had any failures – I try to restrict working on it. I think I will blame it on lack of time. Even though I love the process of seeing a tiny dough bloat up into double or triple the size, I don’t have the patience to wait for it. ๐Ÿ˜€ Only if I have enough time at hand (which is never enough for me in reality! ๐Ÿ˜• ) do I go ahead with baking with yeast. That explains why I have very limited yeasted bakes, and I feel ashamed to say that I am yet to try my hands at baking a home made loaf of bread. ๐Ÿ™ ย  But I have baked this delicious Focaccia studded with olives and sprinkled with Italian herbs a few times. Why? Just because…

Coffee Walnut Mug Cake

ย  Coffee is a close second when it come to baking, after chocolate. I love anything with coffee in it. If it has both, then nothing like it! ๐Ÿ˜‰ Coming to our second recipe in the 3 back-to-back microwave treats after the bread pudding, here is a delicious coffee mug cake studded with the crunchiness of walnuts. This is apt for a lazy breakfast, or a quick treat that you do not want to share. I have this problem that when I crave, I make my little treat and try to eat it as quickly as possible, only to see one of the kids coming into the kitchen at that time, when my mouth is fully stuffed. Azza somehow doesn’t bother since she is not much of a foodie, she takes what she wants and moves out. But Rasha will be all inquisitive, “Ummi, are you eating something?” “Why is…

Coconut Pistachio Biscotti

ย  Everything has to come to an end, right? That is the policy of life. I had joined the Secret Recipe Club in June and was really enjoying my monthly assignments, when Sara declared last month that the SRC was winding up for good and November would be the last month. The monthly participation was dwindling and according to her, the club would be better off endingย on a high note rather than allowing it to die. All of us agreed to it. I have been a part of a lot of challenges previously and it is heart breaking to see how the initial interest just goes down and then it goes into a natural death stage. The SRC is a highly successful event that has been going on for a few years now, so the decision she has taken was for good. I would have started in January, had not…

Baked Mushroom Cutlet

ย  Eating healthy is like a mantra these days. Who won’t tell you to eat healthy? From your spouse to your parents to your colleagues to your friends to your neighbors to everybody you see around are all telling, “eat healthy”. What exactly is eating healthy? It is a very dicey question, the answer of which is different in everybody’s dictionary. While one side will tell you carbohydrates are a big no-no, the other side will tell you to eat your local carbs. While one side will tell you to go on a protein diet, the other side will tell you it will make you look man-like. While one side will tell you to go on a juice diet, the other side will tell you how much such a drastic diet can strip your body of essential nutrients. While one side tells you to go on a plant based diet,…

Wholewheat Apricot Loaf

ย  Of late, I have been literally shaking my drafts. Some pictures that I feel are not meeting my minimum requirements are getting deleted and pushed to the “to make again for the blog” category. Already Fami gave me a little piece of her mind for the “lousy” pictures in the Lauki Chana Dal, saying that the dish deserves a much better picture. ๐Ÿ˜€ I agree with her, but my problem is I will continue to cook it at night and I may not be able to click it in day light. I have heard many food bloggers say that they keep some quantity to click in day light, but that is definitely not the thing for me considering I am working. My day light disappears by the time I am back home. ๐Ÿ™‚ So you will still see night pictures, but hopefully better looking pictures – hopefully, is the…

Orange Honey Bread

ย  I have a lot of cookbooks. I don’t know if it is a big collection, but yes, from my perspective, it is quite a lot. I keep adjusting space to accommodate them in the little book shelf that HD got done to keep mine as well as the kids’ books, but with the way it is going, I may have to ask him to make another one for the kids. ๐Ÿ˜› As of now, I have literally put a stop on my buying. In the past three months, I have bought only one cookbook, which is an achievement, taking into account how impulsive I am. ๐Ÿ˜€ The Sharjah Book Fair is coming up next month and I am chanting to myself – “no more cook books”!!! Hehe… ย  That was when I thought, why not I do cookbook reviews? I have enough of them to do for a few…

Date Cashewnut Brownies

ย  Like many, baking is therapeutic to me, but only if it would not make me feel so off with my weight! ๐Ÿ˜€ I have been on quite a low off late, especially since I have come back from vacation. I have been really struggling to get back into schedule. Either time is moving too fast or I have become slow – it is one of them. Thanks to this “lack” of time, the first thing that got docked off my list was baking. Not because I don’t enjoy it, I love the feeling of baking a lot and I miss doing it. But at times, ย I struggle at home to finish my bakes. Most of the time, it is me who is finishing it. If it is chocolate, Rasha is fine but otherwise she won’t touch it. Azza is really unpredictable – most of the time she acts as…

Pear Almond Cake

ย  Have you ever tried baking with pears? If not, then you must! Very soon… ๐Ÿ™‚ My first attempt was this delicious crisp, but somehow I never went beyond it until this recipe occurred. The recipe appeared in one of the Friday magazines. I have this feeling – that if a recipe catches my fancy, then I think about it every time – in my walk, in my talk, even in between my sleeping! This continues till I finally decide to bake it, irrespective of how long it takes for me to do so! This recipe tormented me for so long till I finally bought some pears only for making this cake. The kids and I love the soft pear, which literally melt in the mouth. If we buy the hard pears, it languishes in the fridge. But umma and mattamma (my grandmother) loves them, so whenever they get their…
