Vegan Banana Bread with Chocolate Chips and Walnut

The days of Ramadan are passing by fast. As this post goes for publishing, it is already the second ten days of this holy month. During the last week, I was listening to a Malayalam lecture and the main topic was of three virtues that Allah has not mentioned how much is the reward – Sabr (patience), Afuww (forgiving) and Sawm (fasting). For every other good deed we do, there is a number of reward associated with it, however for the above, there is no quantification of reward except that He will reward those who possess these quantities abundantly. That got me thinking. “Indeed, the patient will be given their reward without any account.” (Surah Az-Zumar: part of Verse 10) “And the retribution for an evil act is an evil one like it, but whoever pardons and makes reconciliation – his reward is (due) with Allah. Indeed, He does…

Masala Buns ~ Potato Stuffed Buns

“The month of Ramadhan [is that] in which was revealed the Qur’an, a guidance for the people and clear proofs of guidance and criterion. So whoever sights [the new moon of] the month, let him fast it; and whoever is ill or on a journey – then an equal number of other days. Allah intends for you ease and does not intend for you hardship and [wants] for you to complete the period and to glorify Allah for that [to] which He has guided you; and perhaps you will be grateful.” (Surah Al-Baqarah: 185)   The holy month of Ramadan has descended upon us, Alhamdulillah. How each year, Ramadan comes and goes, without even us realizing is an enigma. 🙁 We are passing through difficult times in all ways, whether it is globally or on personal fronts for many of us. I only pray that He makes this Ramadan…

Orange Chocolate Chip Biscotti ~ Guest post for Priya’s Kitchenette

I must say that I can’t sit properly on my chair while typing this post – I am really excited! 😀 Maybe because I am on the space of somebody who has been super sweet and supportive of me for a long period of time… 🙂   Today, I am on Priya’s space. My interaction with Priya started when she went on with the posting-one-recipe-a-day as she started her little space called “Priya’s Kitchenette”. Everybody keeps asking me how I post so frequently, but if you check out my blog, I really can’t do long stretches like she did – posting every single day of a year! Not surprisingly, her hard work was discovered and recognized by the Limca Book of Records. After this year, she concentrated on growing her blog and now she has her own event firm, which makes me feel proud of having a friend like…

Mini Chocolate Mousse Cheesecake

For those who asked me what I baked on our wedding anniversary, this is the answer. With the Blogging Marathon #76 being themed “I love, you love Cheesecakes!”, I had to make sure I did a cheesecake for our anniversary. 😉 And this was what I made. My original plan flopped so bad that I didn’t want to look at it for the whole day. We were left on our anniversary with no dessert/ cake. 🙁 Since HD isn’t a sweet tooth, I had no issues with not having any. We don’t make it evident to the kids about that it is our anniversary, so they were also not aware of the day. Strange parents, aren’t we? 😉 It was only in the evening when we were out for a drive did the girls realise and Rasha was like, “Ummi, why didn’t you make a cake then?”    …

Chocolate French Yogurt Cake

Weekends come with a sigh of relief. The long weekend actually made me slightly under the weather. My throat is sore and most of the time my eyes are puffed up thanks to allergic reactions. I don’t like the way I am feeling even though it has subsided quite a bit with the medication. I am not sure how much I can rest over the weekend, but sincerely hoping to… Meanwhile, I am looking forward to the next week with a lot of excitement. Some little changes on the personal front is what I am expecting, InShaAllah… As we progress in age, we have to seriously look and take care of ourselves and hopefully this step will be the start to an array of change, InShaAllah… I will keep myself updated on IG so do follow me there! It will be just to keep myself motivated and not get…

Semolina Mango Cake

I hope you enjoyed the Mango Custard Verrines and Aamras posts in this month’s 3-back-to-back mango recipes. I have been wanting to bake with semolina since long but never got around it. My first attempt at making the basbousa, which is an Arab style semolina cake soaked in sugar syrup, was a dud, and I never got to making it again. Even though I have bookmarked several recipes that use up semolina, I have still kept it pending. There is so much that I am cooking and trying so some things do go off to the end of the list. 🙂   I made this cake to finish off a can of mango pulp that I had got at a deal. My mind went loitering at all options like ice cream and pudding but then I remembered the semolina mango cake recipe I had saved up very long ago….

Apple Dates Muffins

Schools just opened for the girls on Monday and that marks the start to another strenuous academic year. As the girls move up grade after grade, it comes with a sense of pride marked with a tinge of sadness… that very soon, our children will cease to be kids and be grown ups in their own right. Rasha will be soon entering her dual numeric age and she is so excited about it! She keeps telling me that she is going to become a teenager and while that statement does give me a mini heart attack, I remind her that teenage sets in only once the numeric age name ends with teen, so she still has another three more years to go. 😉 That did upset her a bit, but gave me a little relief too.   As they grow up, it does get a little difficult to handle…

Chocolate Beetroot Brownies

While almost all Indian schools started yesterday, I had some respite of not having to send the girls to school for a week more. I am feeling really relieved of having got an extended holiday from having to wake up really early on a weekday and bang my head over what to pack in their boxes. 😀 Five days isn’t much of a long time, but still… any small break is definitely welcome, since this is going to be the case for the next three months, InShaAllah…   And talking about the weather, we are back to getting hot. The rains have stopped and the winters have moved on. The mornings and evenings are still good, though a little humid, but the afternoons are getting a bit unbearable. The summers have to come in, isn’t it? So let’s get to having a lot of fluid and keeping ourselves hydrated…

Baked Blueberry French Toast

We have had some amazing weather over the last weekend. Scheduling posts actually keeps me away from updating the blog with what happens, but sometimes you are forced to, especially when the posts are related to challenges and you don’t want to miss the dates. 🙂 I like to be particular that way, and Alhamdulillah, so far I have been doing well to manage. If you are following me on Instagram, you would have caught up with the weekend weather updates. I tend to post more weather/sky/nature clicks there rather than my food. 😀 Somehow, I prefer to click my surroundings rather than what I am eating, especially when we are at a restaurant. I prefer to dig in right away rather than pull out the mobile, click it till the perfect click is done, and then eat it cold. I can’t take it that way… 😛 The rains…

Cheesy Chicken Pizza with Wheatgerm Crust

There is one thing I am slowly convincing myself – that I can’t escape from night photography. Period… I have always wondered if people would stop reading my blog if I don’t improve my pictures. Would you? Please do tell me… 🙂 Once during a casual conversation, Lubna had mentioned that the pictures on the blog reflects the nature of the blog. If the concentration is on food photography, then there will be lesser posts, but if the focus is on recipe sharing, then the number of posts will be more. It actually made a lot of sense to me.   I never started the blog to focus on food photography. It was more to keep me motivated to cook, since I know the type of character I am. 😀 I can have long stretches of no-cooking days when we live off the fridge. I don’t want to blame…

Chocolate Croissant Pudding

After the Mango Coconut Milk Pudding, here is the second one for the “Are you Pudding Me?” theme for Blogging Marathon #74. This easy yet delicious Chocolate Croissant Pudding is quite like a bread pudding but with croissant in it.   If you have school going children who are picky about their boxes, then I am sure one of your grocery purchases is a box of croissants. I buy a box at least once a week so that the box for one of the days is sorted out. Sometimes I end up picking up from a different store and the kids just don’t touch it. This recipe is a savior when your croissants threaten to go stale. 😉 What more, the base is a chocolate custard, with even more chocolate chips sprinkled, so it is a totally chocolate treat. A bread pudding is best had warm, so that is…

Vegan Chocolate Cake

We all love a good chocolate cake at home, especially me and my elder one, Rasha. We could sit and finish off it all in one sitting. Azza leans more for fruity bakes rather than chocolate, but once in a while she does love a bite. While browsing through my drafts, I was a bit upset with myself for not having posted this recipe. Can I tell you that this is the easiest chocolate cake you will ever make?   Don’t get me wrong. Run yourself through the list… You don’t need butter, eggs or diary to make this cake, so it automatically graduates to becoming vegan. All you need is some basic ingredients in your pantry, mix it through with some oil and warm water and you are ready to go. When I made this the first time during my vegan days, I was really not sure how…

Hummingbird Bakery Blueberry Muffins

It is already the last Saturday of the month! Wow! I thought doing once a month would be a cake walk, but coming to see, the one month itself passes off in a jiffy! 😀 You can see the previous book reviews here.   Most of the book adorning my shelf seems to be baking book, and that too with a majority of sweet bakes. I don’t know if it is a matter of pride or shame. Hehe… Today, I chose to review this little book that I have in my collection. Everybody must be familiar with Hummingbird Bakery, which is like a must-go for cake treats in London and how famous their bakes are known to me. I have gone to their outlet in Mall of the Emirates sometime back with the kids. While the kids enjoyed their cupcakes, I gorged down on their pistachio loaf along with…

Marbled Classic Banana Bread

From the beginning of this year, life has been hectic. With parents around, the kids act weird. That’s how all grandchildren are supposed to be with grandparents around, right? I sometimes feel like a screaming zombie, who keeps making noise for nobody to listen. It is an absolutely frustrating feeling. 😕 But there is nothing much we can do. My parents leave in another two weeks and already we are feeling a tinge of sadness due to this. The girls are already eating our head to send them off for their summer vacation on their own. Being working doesn’t help since I have hardly a month off on my hand and their vacation is nothing less than two months, which is a lot of time. Each vacation, they complain of getting bored and how their friends are spending the whole vacation back home. I am fine with the idea…

Wholewheat Date Cocoa Muffins

Time of the month for posting the challenge for the Muslim Food Bloggers! Last month, if you remember, we had started a new challenge among a small group of bloggers, and my first post was the Ma’amoul that I tried from the blog that was assigned for that month. This month, the challenge was to cook with a particular ingredient and the ingredient that was provided to our team of bloggers was “DATES”.   We all know how important dates is to a Muslim. There are so many mention of this humble fruit in the Qur’an and Hadith, so much that dates are considered one of the fruits of paradise. Dates are the best substance to open your fast with. Dates was what, when our revered Maryam (AS) suffered from birth pangs while carrying Isa (AS), she was offered to ease her pain. “Shake the trunk of the palm toward…
