I love pancakes for breakfast. It is one of the easiest recipes to cook for a hale and hearty breakfast. Wouldn’t you agree with me? You can serve them plain, with a sprinkling of sugar, a drizzle of honey, maple syrup, chocolate sauce, caramel sauce… whatever you may fancy it with. While searching for recipes for the Blogging Marathon #76 under the theme “Flavors of Greece”, I had to check for pancakes and yes, there were! Tiganites or Greek Pancake are simple pancakes that are made in every Greek household in their own variation and is normally served with a drizzle of honey and crushed walnuts. More than the pancake recipe, it was the servings that excited me and got me into trying the recipe. 😀
Even though Google gave me variety of recipes that looked like normal pancakes with milks, eggs and baking powder, I preferred cooking from here. The pancake base is pure vegan and is yeasted. So the batter is allowed a little bit of rest before you get to cooking. Also, the batter is not flowy as a usual pancake batter would be. The batter in fact looked so much like the one used to make lqeimat. I am surely going to test this to make some in the future. Just plop the batter into the hot griddle and shape it to look like pancakes. Also, do make sure to cook on low flame since they get thick and may get uncooked if on high flame. I kept my oven light on and kept the pancakes in it so that it doesn’t get cold while I finish off the cooking. I served it with honey and walnuts and it was delicious. Since the pancakes hardly have any sugar, the honey was perfect fodder. Don’t miss out on the walnuts. I am not a fan of walnuts as such but I really enjoyed them with these pancakes. Tiganites ~ Greek Pancakes
Ingredients
- 2 cups lukewarm water
- 1 tsp dried yeast
- 1 cup all purpose flour
- 1 cup wholwheat flour
- 1/2 tsp salt
- 1 tsp sugar
- Oil for frying
- Honey and walnuts to serve
Instructions
- Whisk the yeast into the water and allow to rest for five minutes.
- Add in the ingredients from flour to sugar and whisk well till moist. The batter will be thick.
- Allow the batter to rest for 15-20 minutes.
- Heat a griddle and brush some oil.
- Scoop out 1/3 cup batter and drop onto the griddle. Shape into a pancake.
- Cook on both the sides till nicely done. These pancakes are thick, so cook till it is done inside.
- Repeat with all the batter, makes around 8 pancakes.
- Serve warm with honey and walnuts.

Though none of us like sweet dishes for breakfast, I agree pancakes make the best option..I mostly make it for snack and kids are fine with it as I also serve with chocolate..this one sounds interesting, must try for daughter!
