For those who asked me what I baked on our wedding anniversary, this is the answer. With the Blogging Marathon #76 being themed “I love, you love Cheesecakes!”, I had to make sure I did a cheesecake for our anniversary. 😉 And this was what I made. My original plan flopped so bad that I didn’t want to look at it for the whole day. We were left on our anniversary with no dessert/ cake. 🙁 Since HD isn’t a sweet tooth, I had no issues with not having any. We don’t make it evident to the kids about that it is our anniversary, so they were also not aware of the day. Strange parents, aren’t we? 😉 It was only in the evening when we were out for a drive did the girls realise and Rasha was like, “Ummi, why didn’t you make a cake then?”

Since it was on a weekend, I decided to make some amends. I was not really sure what I wanted to bake but finally I decided to bake this cheesecake, since I had all ingredients and I have only one baked cheesecake on the blog, so this one would make it the second one, provided that it comes out well. It was with all trepidation I got this cheesecake getting done. and once the whole setting process was over, I was so over the moon that it DID look like a mousse like cheesecake!

 

Don’t mind the “cheezy” looking clicks, I just wanted the whole set up to match how my cheesecake looked like. 😀 13 years it has been since we have got married, and at times, I really feel I have never understood him as much as he is not able to understand me. I guess, we never go to a stage of understanding 100%, rather instead learn how to manoeuvre through the process called life. We both may be at loggerheads with each other many times but then at the end, somehow we always make it up. Somehow, this verse always rings in my mind:

“Among His proofs is that He created for you spouses from among yourselves, in order to have tranquility and contentment with each other, and He placed in your hearts love and care towards your spouses. In this, there are sufficient proofs for people who think.” (Surah Ar-Room:21)

Would you want to know what did I like in this cheesecake? Number one, that it had no base! 😀 I always find that the base is the most discarded part in the cheesecake. The kids nor HD would eat it. So since I could bake it directly, I was saved from biscuit wastage. Number two, it is a cross between a cheesecake and a mousse. Or should I call it, a mousse that tastes like cheesecake or a cheesecake that scoops like a mousse? You decide, looking at the texture from the below click… 🙂 As soon as I finished clicking, the girls grabbed the plate and had the whole of it, with some assistance from HD. All I got to taste was the scoop that you see below… 🙁 I wished I would have made a bigger cheesecake, but no, better for it to be smaller than anything else… hehe… Off to the recipe…

Mini Chocolate Mousse Cheesecake

Ingredients

  • 1 oz cooking chocolate
  • 6 ounce cream cheese I used Philadelphia
  • 2 tbsp brown sugar
  • 1 large egg
  • 1/4 cup heavy cream
  • A dash of vanilla extract

Instructions

  • Preheat oven to 160 degrees. Keep ready a small springform pan or two ramekins.
  • Boil water for the water bath. Keep a large pan ready.
  • Melt the chocolate in the microwave and allow to cool.
  • Beat the cream cheese and sugar till fluffy.
  • Add in the egg and beat till well combined.
  • Scrape down the sides of the bowl. Add the cream and vanilla, and beat till the mixture is smooth.
  • Pour into the prepared ramekin/ pan and keep into the large pan.
  • Slide into the oven and pour water covering to one half of the ramekin/pan.
  • Bake till the top is puffed up and when touched, is not sticky. I baked 45 minutes for the pan, it may take around 25 minutes if doing in a ramekin.
  • Switch off the oven and cool in the oven itself.
  • Pull out of the pan and cool on wire rack till it comes to room temperature.
  • Cool in the refrigerator till ready to serve.

I always regret making small desserts, but in the end it is better or else I am sure I would finish it as a midnight snack :). Lovely recipe and I like that it is crustless, takes a lot out of the calories.
