Somehow, winter is stuck somewhere. It is already beginning of December and we aren’t getting the chills yet. Mornings are cold, but not cold enough to give you a chill across your spine. A drive in the evening still needs the a/c on in the car. It is not cold enough to go inside your blanket while sleeping. We have had an overly foggy morning this Saturday and today as well, so maybe it means that the winters are slowly coming. Last year, we had quite an early start to the winters and maybe that is why the expectation is a bit dampened this year. Since it is not very cold, it is quite comfortable to be outside, for walks, for just those simple outings. At times I wish HD would be fine with going out just like that without an agenda. He feels I am being too nagging by asking him to take me out when he decides to take his little rest at home, even if I assure him that all I need maybe just a chai and a shawarma… 😀
This weather also brings along with it a lot of laziness. After work, I really don’t want to cook, even though the feeling of the heat in the kitchen gives a lot of warmth. I am trying to make more salads and soups at night, since HD and B seem to love the idea of light dinners, but the kids feel as if I am depriving them. Making two different meals for two groups of people is definitely not in my agenda at all. I really wonder how some ladies make different meals for different family members, but I can’t simply do that. I have seen my umma never do that and I can’t get myself to do it. Either all eat the same meal or none of them eat – simple as that! 😀 Coming to this simple salad, which looks more like a coleslaw – I love the pop of colors on this one – the purple, the red, the beige and then the creamy dressing. So easy to make and is amazing with a side of fried chicken and some air fried french fries… So good to go… 🙂 Off to the recipe…
Purple Cabbage Coleslaw/ Salad
Ingredients
- 1 cup grated purple cabbage
- 1 apple grated
- 1 carrot grated
- 1 small onion minced
- 2 tbsp yogurt
- 1 tbsp olive oil
- 1 tsp paprika powder
- Salt and pepper to taste
Instructions
- Toss up the cabbage, apple, carrot and onion till well mixed.
- Whisk the yogurt, oil, paprika, salt and pepper in a bowl and add it to the salad.
- Toss well to coat. Serve immediately!
