Ready for the second pancake after the Wholewheat Oats ones? 🙂

My craziness for cookbooks knows no bounds, just like how I love to collect props. How much ever I try myself not to, I still keep adding on. Most of the time, I don’t buy them physically, I get them online and it feels like I am getting myself a gift each time I get one through the post! 😉 One such book I landed up with during one of my browsing was the beautiful looking “Mary Berry’s Simple Cakes“. I don’t think Mary Berry needs any introduction. As a cookbook author in her own right and the judge of the “Great British Bake-Off” since its inception, she has a name of her own. I had always heard of the show but since I never had BBC at home, I never watched it till the last time winner was declared and it had become such a rage on FB. Then I watched the final episode on You Tube. Baking under pressure is not easy, even if they give the recipe in your hand, right? 🙂

OK, so coming back to the book – just like it’s name it had some beautiful and simple bakes plus other recipes with simple pictures and step-by-step. How much I love books like that, that show each and every recipe in it! 😀 After going through the whole book, I thought instead of literally folding each and every page to try, I would leave the book alone! Hehe… However, my eyes were fixated on this recipe – you can see above how beautiful it looked in the book! Each time I looked into my fridge, the oranges that I reserved to make this recipe kept staring at me, so one fine Saturday, when my mood was just right, I went ahead and made it. I had anticipated that I would not have any takers for this pancake, however I was surprised at how HD and kids loved it and ate up all that was kept in front of them. Thank God I had already eaten a couple of them hot from the pan! 😉

Orange Scotch Pancakes

Ingredients

• 2 oranges
• Milk as needed
• 175 gm all purpose flour
• 1 tsp baking powder
• 2 tbsp sugar
• 1 egg

Instructions

• Grate the zest off the orange.
• Juice the oranges and pour into a measuring cup. Pour enough milk to make 200 ml of liquid.
• Combine the flour, baking powder, orange zest and sugar in a bowl.
• Make a hole in the center. Pour the orange milk and the egg. Combine well.
• Brush a pan with some oil and spoon some mixture.
• As the bubbles start to appear, flip and cook for a few minutes till done.
• Serve as soon as possible with honey, maple syrup or butter.
