Mango Pineapple Colada

I was wondering why I haven’t posted anything about the weather as such. Hmm… We have had very dicey weather over the past two weeks. We had a day with heavy rains during the evening, and that too on a morning which showed no signs of it! Following the rain, the temperatures went up from below 20s to above it and afternoons have started clocking close to 30 degrees. Even though it is a very pleasant climate with breeze, the temperatures are showing towards summer slowly approaching. Normally, March sees an upsurge in barbeque gatherings and beach outings, which I am sure will be the same this year too, before April gets a bit too much to handle in the outdoors. When Muslimah Bloggers mentioned that the prompt for this month is “colors“, I thought, why not share some of the splashing colors that the sky has been exhibiting over these few days? My phone is always full of pictures of the sky, since I can’t stop gasping at its wonder and clicking it whenever I get a chance to. In fact, I had so many pictures in my mobile, which I could have created a much bigger collage but last weekend, it slipped through my hands and the screen is totally gone. It is likely I will lose all the beautiful pics I had so painstakingly clicked in between my drives. 🙁 Nevertheless, what is not ours, will not stay with us, right… 🙂

With the summers coming, one thing that comes with it is – mangoes! When I had posted the Chia Pudding, I was asked how come I am posting the recipe when there are no mangoes. UAE is a blessed place in that regard. When the Indian and Pakistani mangoes disappear, you can see other mangoes from parts of the globe like Kenya and Australia. I have found Kenya mangoes to be huge, yet really sweet without any aftertastes but with the Australian mangoes, I have been lucky a couple of times and the third time I picked them up, they were ripe on the outside and yellow in the inside, but really so sour – good to make a raita! 😉 The pricing pulls me off from buying them though I do buy a couple just to enjoy the fruit. The combination of mangoes and pineapple in coconut milk is “just so lovely” to say the least – with all tropical flavors at one place, it is a must try!

When I saw B loitering in the hall as I arranged the table to click the picture, I asked him to pour it to me and got clicking continuously before he rushes out. Hehe… I haven’t done any motion pictures after this, thanks to having only the kids around and I wouldn’t prefer their dicey hands for it, already if I ask them to catch something for me to click, they giggle and giggle, making me wobble with my camera! 😀

Mango Pineapple Colada

Ingredients

• 4 thick slices pineapple
• 2 mangoes peeled and sliced
• 1/2 cup grated coconut
• 1 cup water
• 2 tbsp raw sugar

Instructions

• Blend the coconut and water till smooth. Pass through a seive and press through to extract coconut milk.
• Pour the coconut milk into the blender, add the rest of the ingredients and blitz till smooth.
• Serve immediately.
