Be My Guest – Methi Malai Paneer

PicMonkey-CollagePinJust like when every guest post is done, today also I am very excited. Why am I excited? Today, I have a blogger with me who is famous in her own way. First of all, she is record holder for posting a recipe a day for one year. Secondly, her blog was the “Best Food Blog 2014” awarded by BlogAdda. A peep into her achievements and you would be awed. However, the best part about her is that success has not reached her head. She is a humble person who has learned to take it in her stride and be the person that she is and has to be.

 

I guess I have given the hint to all on who is my guest for this month. Yes… none other than Priya, who blogs at Priya Kitchenette. Despite being a pure vegeterian, she always keeps hoping on to the blog to check out my posts and recipes. I must say that she is a really nice person to be with. Even though her schedule was very tight – she recently shifted from Chennai to Bangalore and is neck deep in her shifting works, still she managed to give her post well ahead of time. I am so thankful to her for accepting my invitation and doing it for me inspite of all the hassles. Do peep into her lovely blog for so many amazing vegetarian ideas, the recent one that hooked me up being this delicious looking saffron cardamom pudding… Now I am dreaming of making pannacotta some day with those flavors! 😉 Let us now peep into her lovely guest post – a sumptuous looking classic dish, Methi Malai Paneer… She asked me whether I would be fine with this recipe and I was like, “O yes, y not?”. I hardly have any paneer recipes on the blog and this is definitely a lovely addition! 🙂 As this post goes live, she is currently with her mother, who is hospitalized last week and after that, we have no updates… Let us all have a small prayer for the good healthy of her mother… Off to her post…

I’m sharing a very simple curry today made with cottage cheese, blend of spices and cream. “Malai” means cream, “Methi” is fenugreek leaves and thats how this curry got its name.

 

Serves – 4

 

INGREDIENTS

 

Dry Fenugreek leaves/Methi – 1 cup

Cottage Cheese/Paneer – 200 grams

Cashews – 8

2 Onions (Finely chopped)

Grated Ginger – 1 tsp

2 Garlic cloves (chopped)

Chopped Green chillies – 1 tbsp

Milk – ½ cup

Low fat Cream – ½ cup

Cumin seeds – 1 tsp

Garam Masala – 1 tsp

Salt to taste

Cooking Oil – 3 tbsp

 

INSTRUCTIONS

 

  • Divide paneer into equal size cubes. Add 1 tbsp oil on a griddle and spread evenly. Toast paneer till they are light brown from all sides.
  • Soak dry fenugreek leaves in some water for 10 minutes. Drain water and keep it aside.
  • Soak cashews in some warm water for 15 minutes. Add chopped onions,ginger, cashews and garlic to your blender with green chillies and blitz it to make a paste and keep it ready.
  • Add cooking oil in a frying pan and when oil is warm add cumin seeds and saute for few seconds.
  • Now add onion paste and saute for few minutes till oil separates from the gravy.
  • Add fenugreek leaves, garam masala and mix it well..
  • Blend the cream with milk and add it in the pan. Mix it well and lower the flame.
  • Add toasted paneer and some water if you feel the gravy is too thick and mix well. Now add salt and cook it on low flame for few minutes.
  • Transfer into a bowl and you can serve this dish either with flat bread or rice.

Notes: I have used dry fenugreek leaves but you can also use fresh leaves.
