Carrot Pulao

As I sit to do this post, I am reminded of a little slide I saw some time ago:

Is forgiveness an easy trait? It isn’t – in fact a lot of times, we would never want to forgive the person who hurt us or went against us. Why? Because he or she failed to act and understand what we required, he or she hurt our ego, he or she made a mistake which was not expected from his or her side… But what we fail to understand that the person in question is a human just like us – a human created with imperfections, created to err… Maybe if we were in their place, what is the guarantee that we would not have acted as per that? During tough times, I have been asked questions from my dear ones, “How could you do this?” Yes, how could I do this… how could I act in a way which is way beyond from what people think about me… The very thought used to cripple me, make me depressed, make me hate myself… But with time, I realized, that we make mistakes sometimes without even realizing or downplaying the repercussions, but when it comes into light or when you admit it, the reaction is far more that what we would have expected it to be. During these times, I am reminded about the beautiful verse where Allah assures that this life is nothing and the tests are for our show of faith and strength…

“…Would you not like that Allah should forgive you? And Allah is Forgiving and Merciful.”
(Surah An-Noor, part of verse 22)

Once you forgive and give up the negative thoughts from your mind, He will ensure that our minds are at peace. I will link a article in here, which beautifully explains the whole concept of forgiveness…

 

Coming to today’s recipe… very rarely, I make rice for dinner. Even though it is easier to put together, we are not used to it. I guess it’s umma’s influence which is reason for this. If I actually try to rack my brains to think the rice dishes I have made at night, I can only remember the Nawabi Vegetable Biriyani and the Whole Chicken Biriyani. It always has to be a curry and roti/ chapathi, etc. Sometimes I like to break the norm and one night, this is how I did it. As usual, when the kids and the B saw rice soaking, they were like, “Rice for dinner???” {Frown} I didn’t bother, after all I am the one who is cooking it, right? Got into quick action and this rice was done in very limited time. The initial frowns disappeared once they enjoyed the rice with my mattamma’s garlic pickle and cucumber slices. It is such an easy one pot meal to make when you are pressed of time… Off to the way I made this delicious pulao…

Ingredients

  • 2 cups basmati rice
  • 1 tbsp ghee
  • 1 small pc cinnamon
  • 1 bay leaf
  • 1 tsp ginger paste
  • 1 sprig curry leaves
  • 2 medium onions minced
  • 2 green chillies chopped
  • 1 1/2 cup chopped carrots
  • 1/2 tsp turmeric powder
  • 1/4 tsp red chilli powder
  • 1/4 tsp garam masala powder
  • 3 1/4 cups 700 ml water
  • Salt to taste

Instructions

  • Wash the basmati rice well. Soak in water for 30 minutes. Drain.
  • In a pressure cooker, heat ghee. Fry the cinnamon and bay leaf briefly.
  • Add the ginger paste and curry leaves and saute till a nice aroma comes.
  • Add the onions and green chillies and saute till transparent. Ensure to keep stirring, as it may get stuck to the pan due to the ginger.
  • Add in the carrots and masala powders and cook for five minutes.
  • Add in the drained rice and saute for another five minutes or till the rice turns crisp.
  • Now add the water and adjust salt.
  • Close the lid and pressure cook on high flame for three whistles.
  • Switch off and allow the pressure to go by itself.
  • Open the lid and fluff the rice up with a fork.
  • Serve hot with raita and pickle!

  2. I agree, forgiveness isn't easy, but i think with time and age, one matures and one learns to forgive! Its a baggage we let go of ourselves than of the other!
