Sharing with all of you today, a very simple one pot meal, which is so similar to biriyani without any non-vegetarian element in it. I stumbled upon this recipe in one of the many cook books that I have and decided to make it, not sure how it would turn out to be. I must say that for people who are fine with having rice with just pickle and raita, this is one of the best ways to make rice. I served with this with a chicken curry, that I will share the recipe soon, but personally I had this rice with just a chicken piece, a liberal dose of garlic pickle and a couple of pappadams. Loved all the flavors that were there in this rice… This rice does not seem to need any curry. It looks better to serve with a dry non-vegetarian side, like Chicken Chukka or Simple Chicken Roast.

Malabar Masala Choru | Curried Rice

Ingredients

  • 2 cups basmati rice washed and drained
  • 1 tbsp ghee
  • 6 cashews split
  • 1 small onion sliced
  • 2 garlic cloves minced
  • 2 green chillies chopped
  • 1 to mato chopped
  • 1 tsp coriander powder
  • 1/2 tsp red chilli powder
  • 1/2 tsp turmeric powder
  • 1/2 tsp garam masala powder
  • 4 tbsp frozen green peas
  • 4 cups water
  • Salt to taste
  • Coriander leaves for garnish

Instructions

  • Heat the ghee. Fry the cashews and reserve.
  • Add the onions, garlic, chillies and tomato and cook till the tomatoes get all mashed up.
  • Add in all the powders and saute for around 5 minutes.
  • Add the frozen green peas along with the water. Bring to boil.
  • Add in the rice and adjust the salt. Allow the water to boil again on high flame. T
  • hen reduce the flame to the lowest and cook on closed lid till the rice is done.
  • Fluff up the rice using a fork before serving. Serve garnished with the cashews and coriander leaves.
