Carrot Pudding | Easy Pudding with Agar Agar

A very simple carrot pudding, set with agar agar and always a crowd pleaser… 

After posting 18 recipes, I finally showed my little blog to my HD. He was kind of surprised plus happy as well. He somehow never thought that I would even do a recipe blog, especially knowing the lazy cook that I am. There is no surprise that he was surprised! 🙂 Hehe… He is happy for me and wants me to keep posting as long as I make something interesting. I’m glad that he is supportive… After some time, I guess I can hand over the mantle of having to take the photographs for me, because he is a much better photographer. But then, to get his time is quite a big difficulty. Hopefully, later I may have some decent looking pictures…

OK, now stopping my chatter and going off to the recipe… I like to call agar-agar a life saver. You can literally make a pudding of anything with this wonder-weed.  I always have a packet with me for my emergency services. You can prepare any type of pudding and just add some agar agar to set and voila!!! This is one very easy pudding, which just involves some juicing and setting, that’s it! Without much delay, off to the recipe…

Updated with new pictures on March 27, 2023: Wow! I am updating this post after more than ten years! One of the first set of posts on the blog with cringy pictures… Hehe… I was reading through my post and realized that HD clicked hardly any pictures for the blog except for a couple of them, one of which is my hand shot in the Masala Chai post. He doesn’t care about it much either. So what was I expecting at that time and what it is now! 😀 Anyway, I had made this and shot this sometime ago, but somehow updating the post never happened. Now that it is Ramadan and like a season to make agar agar puddings, I thought, what better time? 🙂

 

The only change I did to the recipe is to cook the carrots in the microwave, making it easier. Initially, I used to pressure cook them. Rest all remains the same. The quantity is a small bowl of pudding, but you can always double the recipe. I have already posted an easy milk pudding with all the dos and don’ts of making dessert with agar agar, also called as china grass. Somehow, even though I don’t like carrot as is, I love it in my desserts, as a milk shake or just the iconic gajar ka halwa, so this type of a set pudding goes with me too. I top this pudding with crushed “kadala mittayi” or peanut chikki to lift it up even more. I hope you like the update… 🙂

Carrot Pudding | Easy Pudding with Agar Agar

Ingredients

  • 3 medium carrots
  • 1/2 tin 200 ml approx. condensed milk
  • 300 ml milk
  • 5 gm agar-agar strands soaked in 100 ml water for 30 minutes

Instructions

  • Peel and chop the carrots into meduim peices. . Add all the ingredients into a blender and blend until smooth.
  • In a microwaveable bowl, put the carrots with water to its level. Microwave for 3 minutes, check for a minute. Cook again with one-minute intervals till soft and mushy.
  • Take out of the water and allow it to cool.
  • Meanwhile, keep the agar agar soaked in the water on low flame and melt it. Cool slightly.
  • Combine all the ingredients into a blender and blend till smooth.
  • Pour into an small glass pan and leave it to set in the refrigerator.
  • Serve it cold, topped with almond praline or chopped nuts.

Notes

With the above quantity of condensed milk, the pudding is mildly sweet. The more sweet you want, you can add more condensed milk.
You can use coconut milk instead of milk.
